The gods never promised to remove his nightmares, only that his deeds would be forgiven. You can go back to the beginning of GOW1 when Kratos is talking to Athena and see for yourself
In that particular god of war game if you destroy the two statues in ares throne room they give you two phone numbers to call where kratos talks to you and explains that ares is trapped in tartarus
a couple important things, when Pandora's box was opened, Zeus was infected by the evil "Fear", thats what that black Zeus spirit was, and it is speculated that upon her death, Athena's spirit was corrupted by the evil "Greed". At the end she wanted Kratos to give her the power of Hope so that she could keep it for herself and become the new ultimate God of Greece, instead Kratos impaled himself, releasing the power of Hope to all of greece, allowing it to spread amongst mankind. It is also speculated that Kratos is cursed with undying, either just in general, or specifically by his own hand, so that he can never escape his guilt.

Apollo (who is different from Helios), Artemis, and Aphrodite are mentioned or are outright shown, yet aren't killed. And a bunch of the gods in GoW 3 are given numerous opportunities to stand aside by Kratos, yet still chose to fight him (to predictable results). Pretty much any Greek God not named in the series can also be assumed to be still alive, most notably Demeter, Hestia, and Dionysus.

Essentially, he’s cursed to never be able to die and his blades will never leave him. He briefly travels through Egypt and encounters Thoth who tries to aid Kratos, but is ignored. Kratos leaves Egypt after slaying a giant crocodile beast. Then he arrives in Old Scandinavia, has a family, and tries to quell his rage by letting wolves attack him without fighting back. After all of that is where 2018 picks up.

I have to state a correction just to clarify the God of War Continuity. GoW (2018) doesn't take place immediately after GoW3. There is an unknown but seemingly long period of time (some theories state that it was a period of a little over 100 years while others state it was over 1,000 years) during which Kratos visits Egypt for a short time in his wandering, reluctantly slays a 'Chaos Beast' using The Blades of Chaos (which he seems to be cursed by and can't get rid of them as every time he tosses them away into the sea, they appear before him when he wakes up after falling asleep). Kratos than wanders far north for an unknown period of time (between 100 &1,000 years) before getting ambushed and dragged through a dimensional rift by Sköll and Hati (Legendary Norse Wolves with godly powers) and than left him in Midgard after being driven off Kratos' fury. Kratos than wanders around Midgard for a few years before the events integral to the plot of GoW(2018) and GoW Ragnarok take place. This is pretty much just a summary of what I could find about this 'in-between period' of Kratos' life after the Destruction of Olympus. Why is Kratos still alive after impaling himself with the Blade of Olympus? My theory is that when the 'Power of Hope' was released from Kratos' body, the powers Kratos once wielded as the God of War (as well as all the other powers from the slain Gods and Titans), still being held in the Blade of Olympus (indicated by the blue glow/aura) rushed into Kratos take it's place. (Notice the Blade of Olympus is no longer glowing after Athena pulls it out of Kratos). With the vast array of powers within the Blade of Olympus absorbed, Kratos is effectively elevated to a the status of a full god rather than just a Demigod and thus he became Immortal, able to survive, and recover from, the otherwise fatal wound from the Blade of Olympus. Side Note: A small portion of the 'Power of Hope' still remains inside Kratos but not much more than a normal person.

As a Speedrunner, have you seen the God of War Speedrun? It's not really a game meant for that, but there's a video showing how a 10 hour game became a 1 hour game.
Its assumed that Athena was afflicted by greed, and want to be the one in control in the end, which is why she was upset when Kratos decided to release hope into the world, instead of giving it to her to abuse for her own ends.
One thing the summary forgot to mention is that when Athena stopped Kratos from jumping off the cliff in GOW 1 she actually cursed him to be unable to die by his own hands so long as any of the Greek gods live, hence why he ends up surviving in the end of GOW 3 and since he is still technically a Greek god all of the curses the gods placed on him still remain in effect.

GoW version of the gods are weak as hell, like they're as immortal as in they won't die of old age, but basically anything that would kill a normal person would kill them too, it's just that since they have super powers they're really hard to kill, specially if they turn into giants, so as long as they're regular sized you can just stab them with a regular ass sword and you're good to go.
