    Great content as usual. If you don't mind would like to correct one thing. It's Amylose not amylase. Amylase is the enzyme in pancreas that acts on starch and helps in digestion.

      He also mixed up the protein and starch. Amylase is the protein and glutton is the starch

      Andrew Goering I dint think he uses too much English so that others non speakers will understand his Hindu ..he speaks 95% in Hindu may be 5% habitual English like butter instead of makkhon .. u should listen full episode before commenting

      Andrew Goering I’m not sure what’s your grievance and what to address ? It’s true English is overpowering our language and As a global citizen we have to accept it .. India is doing really good in international platform .. we can’t avoid English neither do you .. but I agree we should not forget our own language and should be able to conversant in both

      you can get it in Majnu Ka Tilla. You can find various type of tibetan souvenir there. If you are a good bargainer, you will able to reduce the price. my suggestion, take a local tibetan friend with you.

    Hi Ranveer. Great show. Just wanted to correct that the starch in wheat is Amylose and amylopectin not amylase. Amylase is the enzyme which digests starch.

      It’s called Jhadhong.. it’s traditional Tibetan manual blender (only liquids) 😊

    Dear Ranveer,
    we all try very hard to negotiate on money when we go to fish or vegetable market but we never negotiate when we are at a big mall or big food joint .
    we try to loot over poor people but never even try to speak when we are at big places.
    I request you all , please stop negotiating with poor people, try your negotiating skills at mall where it will never work.
    Being a big chef , please spread this message, it will be of great help to poor who work extremely hard for that money. We cant spend few hours in those markets but they work there whole day. I am your big fan but I got extremely shocked by seeing you negotiation with such poor people, who ask almost only their right.
    Please be very humble towards farmers, labours fishermen and all people who give their sweat and blood to bring food to our table.
    Don't make poor more poor and rich more rich.

    I don't think your practical explanation of starch and protein in correct as all of the dough will get dissolved in the water if more water is added and then mixed. Anyways nice recipie.

      No he is right. Isolated Gluten protein is used in a lot of Tibetan, Chinese and other Pan Asian cuisines. This is exactly how it's made. You can watch other videos on RUclips on how to separate gluten from flour and they mostly use this method only.
