Powder Ganger it’s because he only had to fill part of the jigger for the baiju. The rum had to go to the very rim, so it spilled some. The baiju has some wiggle room.
The greatest thing about buying baijiu (白酒) in China is that you can get in plastic bottles even up to 76% alcohol, and it's usually drunk at parties or banquets, also while the shot glasses are small people take so many shots that they can go through multiple bottles per person, furthermore "cheers" in Chinese is Ganbei (干杯) which translates literally to dry cup, meaning no matter how much of what liquid you have in your glass or cup you're supposed to take it as a shot, growing up here I've seen some pretty hilarious scenarios involving this such as people taking full wine glasses of $55,000 per bottle Chateau Lafite and downing them as shots
The weird funk in baijiu isn't due to the sorghum, by the way. It's because these traditional chinese fermentation processes don't use yeast but rather other (often quite unique...some only exist in a single village somewhere :P) fungal cultures. It's not grain liquor. It's fungus liquor :P.
Saki is done the same way and yes... Western culture really does NOT have a relatable (SP?) flavor to draw on. Good for you on 'broadening your horizons' my friend!

My experience with Baijiu can be summed up as an overpowering flavor of fermented old tennis socks followed rather surprisingly by a pleasant chocolatey aftertaste. Most confusing liquor I ever had :P.
Baijiu is vile but it can have a hell of a good buzz, really brings out the Nietzsche in most folks. Think aviation fuel, old gym socks, garbage on a hot day, a touch of cheap sake and indeed, wet dog. For the record, it's pronounced a bit more little more like Bye G-oh or Bye Joe.
Sorghum is used to make a type of molasses, which might be the syrupy quality you're getting from the Baijiu. When I try to drink 151 rum, or Everclear, the pure-alcohol smell makes me think of lab solvent. The way you're presenting the drink, with the dry ice in the teapot, makes it look as if one sip would imbue me with vast wizardly powers - I have green eyes, but I don't speak Chinese.

Nice video, dude. BTW, the liquor you used in the video - the "Moutai Prince" is actually an entry-level model of Kweichow Moutai and it is a blended baijiu. In Mainland China, low-end blended baijiu is usually used as seasoning liquor in kitchen and the "unblended" Moutai baijiu (probably called "Moutai Feitian", about $190 in US) is a popular liquor for banquet.

I lived in China for 6 years and drank Baijiu many times. The first time I tried it, I too thought it tasted inedible and a bit like gasoline. After a few tries, though, I started to enjoy it. It really tastes better the more you try it and it helps to be drunk already of course. It's an acquired taste. There is a very masculine culture around it as Greg noted, and men like to drink it and pressure each other into drinking way too much of it at celebrations like weddings and Chinese New Year, etc. The word "baijiu" is confusing because it's the same word for any clear alcoholic beverage, including white wine. Literally translates to "white alcohol."
Loved that slow zoom in after he tasted the Baijiu, we just know this wasn't his 1st shot (film or otherwise) of the day and half expected a different reaction from that...then again, the man does quite literally drink for a living.
Firewater Baijiu is the only Baijiu I've had that isn't offensive. (Surprisingly not super expensive.) I sell a lot to foreign exchange students at my shop.

One of my favorite restaurants has a Big Trouble in Little China-themed bathroom. Look up Pig and the Lady if you're ever in Honolulu; fittingly, the restaurant is in Chinatown.
Fun fact: baijiu is one of the only alcoholic beverages fermented as a "solid" mash. In a clay pit, no less! I love the stuff, but had to stop drinking it as nearly all of it is adulterated or counterfeit these days, even what is exported. Edit: over the years I have attempted to make Baijiu cocktails work. They are a serious challenge. Two flavors that have consistently worked for me is strong tea like Ti Kwan Yin or Kings Tea, and Chinese sour plum syrup. Just putting that out there so perhaps someone can succeed where I couldn't.
If we knew each other as kids I could totally see us being best friends, we were into all of the same stuff. At the beginning of the movie, when Wang tries to cut the bottle, it almost hits Jack in the face but his reflexes saved him then too. Actually the bottle would have been harder to catch since it was so close to him while the knife was thrown down a hallway(?) before he caught it. Another Kurt Russell movie I saw a million times as a kid was Overboard. I know it's not as action packed as his other films but I really liked it. Of course Goldie Hawn may have been one of the big reasons I liked the movie, lol. See you next episode.

Really enjoy the show, Big Trouble in Little China is one of my favorite movies from my childhood. I'm actually an English teacher in Beijing, posting from China now, and have had a few interesting experiences with baijiu. A couple of fun facts for you, first off you referred to the stuff you got as "Mount Prince" but it's not "Mount" it's Moutai, named for the town of Maotai in Guizhou Province where it's made. Moutai is actually the official baijiu served to visiting dignitaries by Chinese government officials, probably most famously given to Richard Nixon by Vice-Premier Zhou Enlai. The other "fun" thing about baijiu is that the second syllable "jiu" is used to refer to basically any alcoholic beverage from beer up to everclear but it's usually translated into English as "wine" meaning that baijiu is often translated by Chinese people as "white wine," meaning that almost every Westerner in China has a story about visiting a Chinese friend's house or going on a date with a Chinese person and being offered a glass of white wine, then getting a nasty shock when a shot of baijiu is placed in front of them.
I can't have anything stronger than a glass of mead (12.5% abv) but I quite like the taste of alcohol. I watch your show to learn more about drinking and imagine what it could taste like; this is the first episode I've seen where I was glad not to be following along at home.

I actually had no idea John Carpenter was the director... I watched that movie several times and a kid and grew up to think "ya that was a thing" now that I know it's from one of the artists I greatly respect despite knowing little about, idk it kinda puts it in a different light. i was in china last year and i wanted to try some baijiu, but the only stuff cheap enough was the tiny 50-70% plastic bottles in corner stores with hammer and sickle emblems on them.
High end Baijiu is amazing! Got a taste at a Chinese restaurant a few weeks ago. A family was celebrating and had a bottle of Wuliangye (first produced during the Ming Dynasty in China, Wuliangye literally means "Five Grain Liquor"). Rich, heavy aromas made me think earthy and fruity, with...something else. Perhaps like meandering through a dense, tropical forest. The palate was a show stopper! So much flavour, it was difficult to pin down what I was tasting. A sour, fermented fruit with hints of cacao nibs or ultra dark chocolate. I had to look up tasting notes because I was having trouble articulating it. So thick and intense (52% abv!!), as soon as I read "pineapple", it all started clicking into place. Oily, yet crisp, I found it quite sweet as I sipped really small sips, trying to stretch out the experience. As we were getting ready to leave, I finished the last bit in one, larger drink, and was struck by the oddest sensation. It felt like my tongue had gone dry, yet the flavours left the entirety of my mouth coated. Like when you're cleaning windows and you see the moisture appear and almost instantly disappear, leaving a light, protective film on the glass. The taste lingered for well over an hour. At $250-ish CAD, I'm not likely to buy a bottle any time soon, but I definitely want one for my collection eventually.
Watching you spill the Apple Estates ... "Oh dear god the inhumanity!" There is a wonderful steak house/Irish pub in Pensacola Florida called McGuire's. They have a drink that needs to be shared much further around the world. The Irish Wake. It does contain a wee dram of rum, don't ya know. Give it a try, and I hope you remember where you left your feet after you're done. It took me a little while to find mine.

I have it on DVD (that play on one side for wide screen version in a paper/plastic DVD case). Koji bacteria is used to convert the carbs to sugar. But after that? It still yeast. Different flavor, same old alchemy.

One of my favorite restaurants has a Big Trouble in Little China-themed bathroom. Look up Pig and the Lady if you're ever in Honolulu; fittingly, the restaurant is in Chinatown.

Fun fact: baijiu is one of the only alcoholic beverages fermented as a "solid" mash. In a clay pit, no less! I love the stuff, but had to stop drinking it as nearly all of it is adulterated or counterfeit these days, even what is exported.
Edit: over the years I have attempted to make Baijiu cocktails work. They are a serious challenge. Two flavors that have consistently worked for me is strong tea like Ti Kwan Yin or Kings Tea, and Chinese sour plum syrup. Just putting that out there so perhaps someone can succeed where I couldn't.

At the beginning of the movie, when Wang tries to cut the bottle, it almost hits Jack in the face but his reflexes saved him then too. Actually the bottle would have been harder to catch since it was so close to him while the knife was thrown down a hallway(?) before he caught it.
Another Kurt Russell movie I saw a million times as a kid was Overboard. I know it's not as action packed as his other films but I really liked it. Of course Goldie Hawn may have been one of the big reasons I liked the movie, lol.

Really enjoy the show, Big Trouble in Little China is one of my favorite movies from my childhood. I'm actually an English teacher in Beijing, posting from China now, and have had a few interesting experiences with baijiu. A couple of fun facts for you, first off you referred to the stuff you got as "Mount Prince" but it's not "Mount" it's Moutai, named for the town of Maotai in Guizhou Province where it's made. Moutai is actually the official baijiu served to visiting dignitaries by Chinese government officials, probably most famously given to Richard Nixon by Vice-Premier Zhou Enlai. The other "fun" thing about baijiu is that the second syllable "jiu" is used to refer to basically any alcoholic beverage from beer up to everclear but it's usually translated into English as "wine" meaning that baijiu is often translated by Chinese people as "white wine," meaning that almost every Westerner in China has a story about visiting a Chinese friend's house or going on a date with a Chinese person and being offered a glass of white wine, then getting a nasty shock when a shot of baijiu is placed in front of them.
I can't have anything stronger than a glass of mead (12.5% abv) but I quite like the taste of alcohol. I watch your show to learn more about drinking and imagine what it could taste like; this is the first episode I've seen where I was glad not to be following along at home.

I actually had no idea John Carpenter was the director... I watched that movie several times and a kid and grew up to think "ya that was a thing" now that I know it's from one of the artists I greatly respect despite knowing little about, idk it kinda puts it in a different light. Plus I didn't appreciate Kurt Russell as a kid like I do now. Thanks Greg for the unintentional cultural perspective... oh ya, the liquor drinks are cool too
Moutai baiju, the stuff that comes in those creamish porcelain bottles, are known as sauce-scented baiju because they smell like soy sauce apparently.
i was in china last year and i wanted to try some baijiu, but the only stuff cheap enough was the tiny 50-70% plastic bottles in corner stores with hammer and sickle emblems on them.
High end Baijiu is amazing! Got a taste at a Chinese restaurant a few weeks ago.
A family was celebrating and had a bottle of Wuliangye (first produced during the Ming Dynasty in China, Wuliangye literally means "Five Grain Liquor").
Rich, heavy aromas made me think earthy and fruity, with...something else. Perhaps like meandering through a dense, tropical forest.
The palate was a show stopper! So much flavour, it was difficult to pin down what I was tasting.
A sour, fermented fruit with hints of cacao nibs or ultra dark chocolate.
I had to look up tasting notes because I was having trouble articulating it.
So thick and intense (52% abv!!), as soon as I read "pineapple", it all started clicking into place.
Oily, yet crisp, I found it quite sweet as I sipped really small sips, trying to stretch out the experience.
As we were getting ready to leave, I finished the last bit in one, larger drink, and was struck by the oddest sensation. It felt like my tongue had gone dry, yet the flavours left the entirety of my mouth coated. Like when you're cleaning windows and you see the moisture appear and almost instantly disappear, leaving a light, protective film on the glass.
The taste lingered for well over an hour.
At $250-ish CAD, I'm not likely to buy a bottle any time soon, but I definitely want one for my collection eventually.
Best-stocked chain booze shop with a store nearby has baijiu in two stores in California and won’t ship. Upmarket varieties and not cheap.

Big Trouble in Little China is one of his all time favorite movies and the same goes for me as well, so when I saw this video my heart just jumped for joy. Greg, you are truly an amazing guy! I have it on DVD (that play on one side for wide screen version in a paper/plastic DVD case).
