    As a side note, when I make potato soup and it needs to thicken it, rather than using flour or corn starch, I keep on hand envelopes of Idaho brand mashed potatoes and I will sprinkle in that a little at a time till it reaches the thickness I want! Try it!

    Good tip on the potato, they just love light. So what we did was take a nice clean shipping box and put our 10 lbs in it and it sits on top of another solid box, keep stuff off the cement floor. and I have a tea towel over the folded top. Our potatoes are quite fresh and are far enough away from the Onions not to go rotten. We have the onions nesting in a box with a box lid that fits over it and it has holes n the box, we keep the clean dried skins in there too. that helps keep the onions from going soft. I wash off my onions as i peel them with a paring knife if they may have mold in the top layers. Yes sometimes they do go soft, but we really go through a lot of onions per month, about 5 pounds or more. Apples, Onions and potatoes should not be neighbors when storing them. just a tip

    I love your videos when you incorporate your children in it as your quality check CEO's. Whenever I make crockpot chili,I always add frozen corn to it. When done and ready to serve we always serve it over fritos or tortilla chips crushed up,cover the chips with chili,then cover the chili with shredded cheese,sour cream and cilantro on top. I also serve cornpone with it as a side. Cornpone is cornbread with corn in the batter and then bake in a cast iron skillet in a 400 degree oven!

      I like that! If you don’t like the extra fat in general, I can see not wanting to do that but to include the natural animal fat for nutrients and calories without it being oily, this is a good tip!

    • @tjbyrd
      @tjbyrd Год назад +2

      @@MealsWithMaria, Keep in mind sopping up the animal fat or grease with flour or cornstarch would be the same as making a roux or a slurry to thicken gravies and/or sauces with, which means it would thicken whatever mixture you're going to be Incorporating it back in to.
      I use a turkey baster instead of paper towels to pull up the excess grease out of the pan with and just put the grease in an empty can, bowl or mug until it cools then throw it away, unless it's bacon grease, I always save bacon grease for future uses.
      When using a turkey baster, first place your can or whatever your going to be putting the grease in to as close as possible to the pan, tip the pan so the grease will all run to one side then, once it's filled with grease, hold the turkey baster upside down or at least on its side at enough of an angle to prevent the grease from running back out the open end of it until you have it situated directly over whatever you're going to be putting the grease in to then turn it right side up. Otherwise the grease will run out of the open end of the baster all over your stove.
      It sounds complicated but it really isn't, it just takes a little practice and it works really well and also prevents having to waste paper towels. Just use caution and be extra careful not to spill hot grease all over your stove. Happy Thanksgiving! 😀

      ONLY add cornstarch or flour in it to soak up the fat if you’re going to make a rue or going to add a liquid to it.
      To get the grease out of it just make a circle in the middle of the pan and put a paper towel in there it’ll soak it all up. 😊

    I saw a tip once about onions-for times you don’t have fresh on hand, keep some dried minced onion (same with minced garlic) in your spice cabinet. You can reconstitute by soaking in warm water for about 15 minutes. Drain off the water and you’re good to go!

    It actually takes a very large quantity of solanine to cause tummy aches (the green of the potato). And solanine comes from being exposed to the sun when the chlorophyll develops , so always keep your taters in a shaded place. Usually the average cook with a couple of green tinged potatoes is not going to cause issues with serving to the family. If it makes ya feel better, by all means, peel it off, but it isn't necessary. If your potato still tastes bitter, then consider cutting off the good part and discarding the greener part, as that will contain the most solanine.
