I love your tutorials, Thanks for so generously sharing your knowledge. I just attempted this with swiss merengue buttercream. It wasn't as easy to pipe as you made it look. Hmmm, perhaps I had a 12" wilton bag 1/2 to 3/4 full and needed both hands to squeeze. So I had a lot of shorts strips of icing on the vertical sides. I also found that I had to refrigerate in between colors. I could see the buttercream softening. What kind of buttercream did you use? Any tips on what I could have done?
i wonder if she used American buttercream. It tends to be thicker and holds up better in warm areas, although its too sweet for my taste. In my experience, meringue buttercreams more fluffy but don't do so well after being out in the air for awhile compared to American buttercream. It sags and droops.

+PandoraEast This is the sweet butterream, which is the American kind. I do use meringue ones for this too, but just fill the bag half way.

Mary Fotchuk You're welcome. It's just about not letting it get too hot or cold. Stiff icing breaks, and so can melting frosting.
