    Create this gorgeous pleated buttercream textured wedding cake, and learn the art of fresh flowers. I created this technique after seeing fondant versions, and you all know how much I just love working with buttercream. This is a beautiful piped cake, and it is easy to do.
    Fresh flowers are extremely delicate, and if not wired together correctly, they can lose their petals, fall apart, and even wilt. Watch as Darlene creates a stunning posy using her 2 decades of experience to create the perfect arrangement.

    • 6” x 2 Cakes, baked and cooled
    • 8” x 2 Cakes, baked and cooled
    • 3.5kg (7lb 7oz) Sweet buttercream ( • Sweet Buttercream Reci... ) - 1.3kg (2lb 13oz) for filling, 900g (2lb) pink,
    1.3kg (2lb 13oz) taupe
    • To make pink icing:
    1 part Sugarflair Pink food color
    1 part Americolor soft pink food colour
    • To make taupe icing
    3 parts Wilton Ivory - amzn.to/1qXfjvF
    3 parts Americolor Chocolate Brown
    1 part Americolor Black
    • Large spatula - amzn.to/1Vtq19X
    • Small spatula
    • Turntable (optional)
    • 6” and 8” Cake boards/ cardboard
    • 9” MDF board - covered in white fondant
    • Large Bread Knife - amzn.to/1qXhtew
    • Parchment/ Baking paper
    • Metal/ Plastic scraper - amzn.to/1Tc5ocs
    • Ruler (optional)
    • 2 inch template marker
    • Piping bag
    • Coupler (optional)
    • No. 104 and No. 7 Piping tip
    • Wooden dowels
    • Conduit cutters
    • Pencil
    • Dowel template
    • Paper towel
    • Flower vile
    • Fresh flowers:
    6 roses
    • 24 gauge floral wire
    • Green parafilm
    • Sharp flower cutters (scissors)
    Flower Tips and Tricks from Darlene
    * Buy the highest quality of flowers, from a reputable florist. For a better quality finished
    topper, purchase flowers that are in season. They will fair much better
    * Purchase your flowers 2-3 days prior to the wedding, unless it is extremely hot. This
    will allow them time to open
    * Once you have the flowers, cut about 2cm off the bottom of your flowers, and place
    them directly in water
    * When cutting the flowers, ready to wire, cut the stems to 1-2cm in order to use the
    flower vile
    * When creating a flower spray, wire a few extras in case of damage
    * Once wired, do not place your flowers in a household fridge, or they will blacken when
    you remove to use on your cake. You can however use the crisper/ fruit section for
    your ready-made topper
    *Ideally flowers like a temperature of 5-7C degrees. Tropical style flowers and orchids
    can not be refrigerated at all

    Love all buttercream cakes. If I did this I would make several buttercream roses for the top instead of real flowers!! I love all the pleated texture on this cake!! Thank you for taking time to show us how to do this!!! You are the BEST!!!

    Oh I love this idea...I never really worked with buttercream as a cake cover (I use fondant mostly) but these tutorials of yours make me soooo excited to try these. It's actually great, because I find even if people love the look of a fondant cake, they don't really like to eat it. I hate to see the fondant I kneeded, rolled and smoothed with care being thrown away cause people pick it off the cake :D

    this was a great video. Ya'll did a very good job explaining as well as demonstrating. i still stick with single tiers (two or three layers) but i definitely want to try the pleats. I may venture into fresh flowers or just use some buttercream roses. i still need to learn some other large buttercream flowers.
    About using fresh flowers, how do you make sure the flower itself doesn't "contaminate" your cake? (i.e. pesticides, bugs or other things that may have been on them at some time)

      joyfuljaj Knowing your supplier, Darlene gets them straight from the grower, stick with safe non toxic flowers, roses are edible after all, well, when grown for it. Also, using the flower viles to make sure the stems don't go in the cake.

    wow this is cool I will subscribe so that I keep improving at my cake designs. I did a roset cake on heart shape from your tutorial ans my client loved it. keep it up. is there another nozzle we can learn from I see you really love the 104 tear drop. hahahaha.       Helen Lee The one in the video was not, and we just gave it to a friend. But the one in the thumbnail was a real photo from a photographer at a wedding we did. Again flowers by Darlene.

    Hi, love this tutorial.. thank you so much. Just a general question about buttercream though as I have never used it for decorating a cake. Do buttercream covered cakes have to be refrigerated all the time.. or can they be left out like fondant covered cakes (which is what i am used to making)? I am going to make my daughters engagement cake and she wants the rustic messy look with sugar flowers. So if I put the cake in the fridge I am scared the sugar flowers be ruined and if I leave the cake out I am scared the buttercream will melt. I would love your advice. Also I have never seen any one cover a cake with royal icing mixture, could I use this over a buttercream crumb coat? thanks so much for your help, Maryann

      Maryann Delicata Hi, You don't have to keep it in the fridge if the room temp is cool, or air conditioned around the clock. If you ened to place it in the fridge, don't attach the flowers. I always attach flowers at the venue anyway, as driving a cake with flowers down our streets would not end well lol. Some people use royal icing, but I can't say i've tried. Best of luck.     Hi there. Just wondering where the cut, fill and crumb coat playlist has gone? The link in the description takes you to an empty playlist! I remember watching one that was excellent where you trimmed down the sides of the cake (I think you talked about how that made the cake when sliced look very uniform). I'm pretty sure I found it from watching this ruffle cake video. Anyway, it was a great video that I watched from time to time just to refresh, so I'm wondering where it is??!!

    i am comfortable with the safe insertion of fresh flowers into this buttercream cake. Would you be able to do a tutorial on arranging fresh rose flowers cascading down a small tiered cake. i hv a task to create on a 2 tier 6 and 8 inch cakes but i searched n searched online for a tutorial but disappointed i cant find not one with fresh flowers. Thank you :)

      Ushma Gandhi Thank you. Well, you could make a hole with a dowel and then wrap something like cling wrap around the flowers tightly, then place it in. :)

      Cakes Cupcakes Yes, they are fine. Coming from a florist, it is safe to use. But there are some flowers that are poisonous, so if you are worried, you can look it up online.

    How do you get the bottom colour. Love it. Brown goes pink/skin colour before you get the brown. Ivory americolour get's almost to this colour but it's not strong enough to get this dark????

      Marie Gonzales-Molina Just a few hours, maybe up to 8 hours, depends on the type of flower though. Lillies, an hour or two only. Roses last a while.

      the dowels help support the cake so they don't collapse.

    why wouldn't you just cream the middle betweent eh two whole cakes? (as opposed to splitting it into 4) just curious!
