Really all you need to do for this is to start the scale on the 2nd, 3rd, 4th, and 5th note of the scale. I kind of appreciated how he tried to keep it out of the realm of modes and in the realm of options for C pentatonic. If that makes any sense. Not sure if I could explain: that run at 5:15, in a groove, one would return to the root (or the next note in the progression), so it wasn't done to remove the lingering root established at the beginning of the run but to expand it.
