  • Keto Chocolate Bar Recipe. How to make impressive low carb dessert
    1 1/2 Cup - Cacao Butter
    1 1/4 Cup - Cacao Powder
Sweetener to taste (I recommend Swerve Confectioners Powder)
    1) Make a bain-marie by fitting a glass or ceramic bowl over a saucepan of water. Do not let the bottom of the bowl touch the actual water. Bring the water to the boil then turn it down to a simmer. Very slowly melt the cacao butter in the bowl of the bain-marie. Take the cacao butter to no higher than 40-45°C/104-113°F. If you think it is getting too hot but hasn’t all melted, take it off the heat to finish melting. It is important not to overheat it or the chocolate will taste grainy and be ‘bloomed’, with a white cloudy appearance.
When the cacao butter has melted and is at around 40-45°C/104-113°F, add the rest of the ingredients. This should lower the temperature and we now want to bring it down to 28-30°C/82-86°F; just above or below will be fine.
    2) Blend all the ingredients together with a hand-held blender to get rid of any cacao powder lumps and until velvety smooth and glossy. Do not over-blend or the chocolate will stiffen too much. If it is too stiff, place the bowl back over the hot water and stir gently for a minute or so then remove from the heat.
    3) Keep stirring the chocolate gently to cool it then, when around 28-30°C/82-86°F, pour it into a silicon mold. Add your toppings. Then refrigerate until hard.
    Toppings I used are:
    - Sea salt and almond slices
    - Instant coffee
    - Orange oil and hot chili

    Swerve Sweetener: amzn.to/2iNPeg3

    Orange oil: amzn.to/2Izp8Z4
    Cocoa powder: amzn.to/2GFrVzr

Word to the wise, wash that silicone when you get it.
A releasing agent is used in the factory in order to pop them out of the cast they are poured into.
Not washing them contaminates whatever you are cooking in it with that releasing agent.

Can't tell you how nice it is to get a recipe without twenty minutes of talking when I really just want the quick recipe. I've been making my chocolates for a while now and although I enjoy them in this hard form sometimes I add a bit of cream at the end of mixing to get a truffle like consistency. After pouring them in mold I put them in the freezer, later unmolding and putting them back into the freezer for an ice cream like cold treat or letting them warm for a truffle texture.

Thanks! I make Keto chocolate often, but never tempering it. I just usually keep in the fridge till I want to eat it. This will be helpful! I'm currently on Round 2 of Keto (I did Round 1 in 2020 and dropped 70 lbs). I began Round 2 on May 9th, 2023 and it August 15th and I've dropped 22 lbs as of today. I have way more energy and my mood is stable.

    BTW
I've been making your chocolate, love it. I've been on a Ketogenic diet with Intermittent Fasting for 3 months. I dropped 15 lbs, all my blood test results reversed. My Hemoglobin A1C dropped from 11 to 7. My fatty liver functions dropped from 112 down to 60 and my LDL cholesterol is even lower. My daily average fasting blood glucose is around 93, when it used to be up around 180. Thanks and keep the recipes coming.

    1/2 cup + 1/4 cup - Cacao butter

    3 Tbsp - Swerve
    1 tsp - Orange extract
    a pinch of salt

Simply heating the cocoa butter to a certain temperature won't temper the chocolate. It either needs to be quickly cooled while maintaining a high level of agitation, OR an easier method is to stir in a small amount of solid chocolate (tempered or untempered) as it's cooling. This introduces "seed crystals" to the mix which encourage formation of more beta crystals among the cocoa butter fats.

You can use a metal bowl, most chefs do. You just have to really watch it carefully as it can scorch much easier. Tempering is taking it up to a certain temp then dropping to a certain temp depending on what kind of chocolate you’re making. For anyone melting chocolate for say chocolate covered strawberries melt the chocolate then throw in a small chuck and stir.once it’s melted you an start dipping.

One of the things that makes keto effective for some people is the lack of food variety. Bacon and fatty foods sure sound good but when you eat them day in and out you tend to lose your appetite for them and eat less and less hence more weight loss. When you start adding in all these keto fun desserts you reduce the effectiveness of keto as you cause people to eat more.

  • @robc8593
    @robc8593 4 года назад +1

I had a go with this today, I found I needed to sieve the Cacao Powder to knock any lumps out before adding. The big mistake I made was not grinding the sweetener (UK - Truvia) granules enough so although the chocolate is smooth, there is some grittiness from the sweetener. I think I may get some liquid Stevia to use instead. I added some dairy to a few samples (only had thick Greek yogurt around) which didn't affect it setting at all so I may experiment with some heavy cream to see how far I can push it towards milk chocolate and still have a set texture. Useful video as a starter!

    • @robc8593

A sample made with some smooth added wholemeal peanut butter is really good, still set fine but not as dark tasting, almost a bit 'creamy' and very tasty.

You can make a really nice chocolate very quickly by melting a cup of coconut oil in the microwave for 20 or 30 seconds or so then add 2 or 3 tablespoons of cocoa powder or more depending on how dark you want your chocolate and as much powdered erythritol as you like for your taste. Pour into moulds. That’s it, simple. We often added shredded coconut or peanuts, almonds or chopped macadamias. Delicious, simple and keto. Store in the fridge or freezer.

I followed the recipe exactly but wanted it slightly lighter so I added double cream to make it more of a ganache but was very, very happy with the results.
Can I please ask that you look up how to say the French words. It’s not that important but it sounds a little better.

It's cool to watch such a videos at post-USSR countries, where we usually don't have cocoa butter, erythritol, swerve etc. or have it only in big shopping malls for a high price, located in an hour-drive from home. If you want to order it from ihearb or smth else, the delivery will cost half a price of an already expensive product or even more. Oh yeah, plus we have a tax for parcels more than 22€, which may cost like delivery]
And that's in the capital of our country, i don't even want to know, what's in the other cities
    Kogda bombanoolo...

a pinch of salt helps with bitterness. same with coffee. smallest pinch of salt to taste. it will get sweeter and then salty pretty quickly so tiny bits at a time. Xo
