    BASE KETO CANDY RECIPE
    Makes 30 (1 square cm candies)
    2 tablespoons unsalted butter
    1/4 cup sugar free vanilla syrup
    5 teaspoons sugar-free sweetener
    pinch of salt
    For Salt Water Taffy: add an additional pinch of salt
    For Banana Laffy Taffy, add yellow food coloring and 1/2 teaspoon banana extract
    For Keto Caramel, use sugar-free caramel syrup, add 2 tablespoons heavy cream.
    For Keto Hi-Chews, omit the pinch of salt and add 1/2 teaspoon of LMNT watermelon electrolytes
    For Jolly Ranchers, add food coloring, 1/2 teaspoon flavoring and 1/4 teaspoon citric acid
    1️⃣ Melt butter in a small saucepan over medium heat. If making caramels, cook the butter until brown bits start to form and the butter have a nutty aroma. This is called browned butter and it creates a delicious caramel flavor.
    2️⃣ Reduce heat to low-medium. Add sugar-free syrup, sweetener, salt and food coloring (if using). If making caramels, add in the heavy cream. Stir to combine. Let cook until the mixture starts to boil.
    3️⃣ To Make Soft Chews or Taffy: Continue cooking over low-medium heat until the mixture starts to foam and turn frothy. Remove from heat, stir in flavoring and pour into a candy mold. Refrigerate for 1-2 hours to set.
    4️⃣ To Make Medium Chews or Caramels: After the initial boil, continue cooking until candy mixture starts to foam and turn frothy. Cook for an additional 1-2 minutes or until the mixture has thickened and you can scrape a spoon on the bottom of the sauce pan and see the pan. Remove from the heat and quickly pour into molds. Refrigerate for 1-2 hours to set.
    5️⃣ To make Hard Chews or Hi-Chews: After the initial boil stage, continue cooking until candy mixture starts to foam and froth. Cook for an additional 3 minutes or until the mixture is thick enough to pull off in a ribbon if you lift it up with spoon. Remove from heat and quickly pour into molds. Refrigerate for 1-2 hours to set.
    6️⃣ To make Hard Candy or Jolly Ranchers: After the initial boil stage, continue cooking past the foam and frothing stage. Cook until larger clear bubbles start to form. Stir in flavoring and citric acid (if using). Remove from heat and quickly pour into silicone molds. Refrigerate for 1-2 hours to set.

    It’s nice to see a sugar free candy recipe that uses allulose. I hate when ppl make keto caramel recipes and use erithrytol without telling people it recrystallizes which isn’t cool bc it’s expensive and ppl don’t wanna waste their stuff. I love allulose and it’s what I use too :) thanks for sharing. I’m not keto but trying lower my sugar intake bc of my teeth and overall health lol

    This is fabulous. I had no idea a base sugar recipe could be so versatile in making so many different candies. Candy making seemed so intimidating, but watching your video has inspired me to give it a try. I have tons of flavorings and extracts that I can finally use for candy making rather than baked goods or Chaffles. My mind is sliming with flavor combinations. Thank you so much for sharing this and putting in the time to develop the recipe and formula.

      Have faith in JESUS CHRIST as LORD and SAVIOR for HE SAVES from hell❗️
      *What is the Gospel?*
      The true gospel is the good news that God saves sinners. Man is by nature sinful and separated from God with no hope of remedying that situation. But God, by His power, provided the means of man’s redemption in the death, burial, and resurrection of the Savior, Jesus Christ.
      Ephesians 2:8-9
      For it is by grace you have been saved through faith. And this is not your own doing; it is the gift of GOD, not a result of works, so that no one may boast.
      Romans 10:9
      9 because, if you confess with your mouth that Jesus is Lord and believe in your heart that God raised him from the dead, you will be saved.
      JESUS CHRIST can come anytime!
      Just Believe ❤️ Love you and GOD BLESS

      The best corn chips I've made so far are by frying the tortillas from A La Madre. You have to order them from their website. The absolute best corn tortillas--have no idea how they manage it but somehow the glycemic index is extremely low. Mild corn flavor, but they fry amazingly into chips. I fry half a pack worth at a time, cutting the stack of tortillas into eighth-size wedges. You can put a bunch in the fryer at a time--they don't stick to each other!

    • @Puglover130
      @Puglover130 2 года назад

      Yes, she said you can, the monkfruit she mentioned is a erythritol blend .
      To sub for the electrolyte you would add a pinch of salt plus a bit of flavouring . So depending on flavour you could extracts, Candy flavour drams , or it’s possible that even SF drink mix could work.

      They discontinued it 😩 They claim the new honey is a replacement but it’s a different flavor and too sweet with a strange aftertaste. I plan to rework the recipe next week using allulose syrup instead.

      @@KetoFocus You would think there would be a big market for "keto replacement for corn syrup". A search on that phrase doesn't turn up anything promising as a bottled product.

    Great video..but can u please explain how melting butter can create chewy candy?? What is the ingrediant that causes the butter to become a chewy consistancy?? Is it the cooking of the butter, or is it the vanilla syrup?? And do we need the same kind of syrup to make these things?? Where can we get that sugar free syrup?? Thank u for the info!!

    • @karabean
      @karabean Год назад

      From watching the video, it looks like it has more to do with the heat rather than the ingredients. My take-away from this is - the longer you cook it, the harder the consistency is.

      I think it's the mix between the butter and the syrup. The syrups main ingredient is soluble corn fiber.

    It looks like ChocZero doesn't make vanilla syrup anymore- Have you found a different alternative? Candy making is tricky buisness and wouldn't want to mess with the base recipe. It looks like their syrups are soluble fiber based so that's likely quite important.

      I made it with the suga- free vanilla Torani syrup sweetened with erythritol and stevia. I just made vanilla caramels. They tasted great...but they were too sweet for me. If I can tone down the sweetness they will be awesome. I'm going to play around with it and see what I can come up with. ;)

    • @KetoFocus
      @KetoFocus  2 года назад +2

      ChocZero is keto friendly. Lots of people use it, test blood ketones/sugars before and after and still in ketosis. Dr. Ryan Lowery from ketogenic.com published a study a few years ago showing how soluble corn fiber (the type used in ChocZero syrups) doesn’t raise insulin or blood sugar. There have been a small amount of people who are diabetic with serve insulin resistance that do get increased blood sugar with soluble corn fiber but for the majority of people, that’s not the case.
      Like I mentioned I have tried other syrups yet. But I bet allulose syrup will probably work too.

    Good ideas, but here are a few comments: Correct English is either: MORE CHEWY or CHEWIER...not "MORE CHEWIER". When "-ER" is added to an English adjective, it means "more". Thus, your words are redundant and equivalent to saying "AM in the MORNING".
    As for the candy, why are you adding flavored syrups rather than pure flavors? For that matter, it would be cheaper to make your own concentrated syrups with pure flavoring, Allulose & water. Also, though the temperature at which it happens is less than for table sugar...(about 300 vs 320 degrees for sugar)...Allulose caramelizes like sugar.
    Finally, it would be helpful if you gave finish temperatures for these candies. Virtually all modern confectioners use thermometers rather than the old way of "soft crack", "hard crack", "soft ball" or other descriptions of appearance that vary with temperatures, but are all approximations..
