It doesn't matter what temperature the butter is, because it's melted along with the chocolate. Eggs should be room temp for all baking; although you can usually get higher peaks with cold egg whites, so a cold bowl is good, or you could add a little dash of cream of tartar.
THIS!!! when I first heard about Keto I thought I can only eat meat, eggs, butter and some veggies. I'm German, bread is really important to us xD but then I found so many youtubers that post recipies for bread and cake and icecream and all of that. it's amazing. I just wish the products were a little cheaper here in German.
I made that. It was delicious. I added some vanilla extract, a drop of apple cider vinegar and a teaspoon of instant coffee. It tastes better the day after and cold.
I made this cake again. This time I doubled the recipe and also added a half of chocolate chips and a half of cocoa powder. I substituted part of the Swerve for some stevia powder as well plus the previous modifications. It's so so good!

I made this today morning & it was beyond amazing! I also added in a tbsp of vanilla extract to eliminate the smell of the yolks. Also avoid over beating the egg whites! A 5/5, highly recommended recipe 🙌🏻

if i am using Hershey's unsweetened cocoa powder, how do i add the butter? just melt the butter in the microwave, add the cream , chocolate powder & sweetner then wait till it coold down then add yolks & carry on with the rest of the recipe? thanx dude, I love ur channel & i am also a die hard metalhead :) \m/
Made this one today. Don't ask about the condition of my oven after forgetting to wrap or put a pan under my springform pan. or about how my meringue never achieved stiff peaks, or how the butter somehow managed to separate entirely during cooking... but what I ended up with was an AMAZING, dense, fudgy brownie that I'm absolutely in love with! :)
You also really need to unfatten your bowl and anything that comes into contact with the egg whites. And it's better to alternate mixing slowly and fast to get a more stable mixture. If adding some kind of sweetener to the egg whites, remember to add it in small amounts, not all at once.
I just watched for the first time. I have been doing Keto for 8 months now and I am always looking for the best recipes. These are pretty fabulous and easy.
I made this with a tweak for my husband’s 26th birthday. We both love this recipe, so I made the cake, cut it in half into two rounds, put the whipping cream in between the layers instead of on top, and glaced it all with another two bars of melted dark chocolate. Yumm! Also since this recipe has such a rich flavor, we like to eat it in 16 servings instead of 8 = more than enough for the whole family.
Thank you so much!! I made this for my diabetic grandmother’s birthday and she loved it! I used coconut cream instead of heavy cream (that’s all I had on hand) and added a tsp of instant coffee. FYI, there’s a company called Montezuma’s that makes 100% cocoa bars. You can order it online, but Trader Joe’s sells it pretty cheap compared to most sugar-free chocolate (approx. $3 USD). What I like most is that it doesn’t contain soy or any other nasty ingredients. I definitely recommend it.

I'll be making my own chocolate for this. You should give it a go, I used 100% raw cacao powder; hazelnut stevia; peppermint oil and 100% coconut cream. Added cinnamon for glucose purposes is optional. Let it freeze; and then put it in the fridge. It comes out as pudding or fudge-like depending on temp and how long you have it in for.

Mine was a little dry, some whip cream made it better. But yes it does taste good if you like dark chocolate. We can only do so much on Keto and this is a good compromise.

For many things, you can sub coconut milk one to one for dairy milk. Obviously, in some recipes, the lower protein content will be an issue but I doubt it will be in this, especially since it is flourless. Technically, coconut oil shouldn't be subbed one to one for butter because coconut oil is 100% fat while butter is up to 80% fat. And, personally, I find subbing one to one makes for a greasier, oilier product with coconut oil. With that said, my sister does it all the time and she has pretty good results. For me, I notice the difference and would still recommend that, ideally, you sub 80% of the butter with coconut oil and the remaining volume with liquid (water).

Thank you so much for sharing this recipe. I’ve used it so many time and the last time I added half 100% chocolate and half white chocolate which surprisingly didn’t have much carbs but it helped sweeten the bitter dark chocolate. Also I eat it warm with whip cream kinda like brownie.

Instead of the eggs, if you add in powdered almonds and finely grated dried coconut you can make chocolate truffle balls...just roll them in cocoa powder and sit them in the fridge for a few hours! Love your videos! PS. I don't have an oven so I bake my cakes in a non-stick frying pan on the lowest heat...once it's started to 'set' you simply transfer it onto a plate and flip it over in to the pan to cook the other side like an omelette!

It is not true that fats make u fat! and then carbs =sugars so not healthy at all if u eat for breakfast oats then for lunch pasta then for a break a sandwich and then for lunch noodles...all this sugar... and I'm Italian !lol Carbs like pasta,bread,corn,rice,legumes,pizzaa.. even glutenfree are made 80% of sugars,so it's like you eat 200 grams of White sugar a day! It's sensible because we discovered wheat only 10,000-8,000 years ago ,before this time we used to eat only meat,fish,vegetables and some fruit and this is how now people get ill so easlily of cancer,diabetes,cholesterol,alzheimer and other many bad illness. Wheat is not the only source of carbs... To say it all(cancer and other illnesses) started with wheat and before that humans had a carb free diet doesn't sound right to me. I'm not saying it can't be part of the problem, but it's probably cause by multiple factors. Anyway, I'm glad it makes your stomach feel better :)
So I finally made this! Love it!!!!!!! Going to freeze most of it so I can have some later. I made 2 in a row, and changed it up a bit. The first one was pretty exact to the recipe, except I had 100% cocoa and used mostly that and a little 85%. I also added some vanilla. The second one, I added about a Tbs and a half of instant decaf coffee, vanilla, and vanilla creme flavored liquid stevia to the cream and mixed it before adding it to the chocolate. I think the 2nd one is so much better. so delicious. You gotta try sometime. I'm going to make a cream cheese frosting just in case but it looks like it will be fine without. I struggled with getting those yolks to emulsify. took much longer than it seemed in the video. Maybe that's American eggs for you.
Mine were fine, heres a tip !add cream of tartar (about 1/8 teaspoon per egg white), or lemon juice or white vinegar (about 1/2 teaspoon per egg white) before beating.
I made this last night for Valentines Day...OMG, it was so good. I normally don't like the dark chocolate recipes as they are too bitter and I love dark chocolate candy. However, the 85% Lindt bar is right on target! Served with strawberries in erythritol and Publix Whipped topping. Amazing low carb dessert! Thank you for sharing.
Tried making this tonight. Everything was going along swimmingly until I added the sweeter - I used Swerve Confectioners. The mix split. I was never able to emulsify it. Will try again with Truvia.

I made this last night- and it is METAL. Super rich, sweet tooth satisfying and with a velvety texture similar to a truffle. I'll definitely be making this for life. Tip: add a blop of sugar free whipped topping. And yes, I have made a vegan version of this. While it doesn't rise and is more brownie-like, it's easy and fun to make with unsweetened cocoa or 85%er, Truvia or Splenda, sugar free maple syrup, aquafaba and almond flour. PS: Put me in the cold cake camp as well. There has to be a Celtic Frost Cold Lake joke in there somewhere..

It's a great way to lower insulin, promotes better Health by fighting inflammation, may enhance heart health by improving blood pressure, triglycerides and cholesterol levels etc... Cooked this one up and it was super terrific! Only used 100g of 90 percent chocolate as I didn’t want it so rich. It was really lovely, like a slice. Then I iced it with heavy cream and a no sugar chocolate powder beat together. So yummy in my tummy.

I wish I could show you the photo of it in my oven (I put a tray underneath, I was terrified from all the stories I had read here...), but it stayed exactly where I poured it! Tomorrow is me and my boyfriend’s first birthday together (yes, we have the same birthday) I tried this recipe out tonight and at first, the chocolate ganache spitted. It wouldn’t work no matter how much I beat it. But I put it back on the bian marie for a few minutes until heated through and add a splash of warm milk and beat on high.. it fixed. Then I quickly fold the whipped egg whites and put in the oven... the cake came out perfect! I love it so much! Thank you xx

Phil Gianforte You can use normal whipping cream. I use a brand called Amul Cream which is 25% fat.

haha I actually cut my cake into 16 servings instead of 8 and I used to eat 1 after lunch and 1 after dinner, that way I got my dessert fix too :)

My daughter is SO hard to please and such a finicky eater - but now that I make your keto meals, she is SO happy and doesn't just pick at the dish anymore!! Before I found you, I would ask what she wants for dinner and she would just give me the usual "oh, I dont care, what does Ethan (her brother) want - I'm fine with whatever". Now she actually askes me to make specific meals!! Thank you brother!!

For many things, you can sub coconut milk one to one for dairy milk. Obviously, in some recipes, the lower protein content will be an issue but I doubt it will be in this, especially since it is flourless.
Technically, coconut oil shouldn't be subbed one to one for butter because coconut oil is 100% fat while butter is up to 80% fat. And, personally, I find subbing one to one makes for a greasier, oilier product with coconut oil. With that said, my sister does it all the time and she has pretty good results. For me, I notice the difference and would still recommend that, ideally, you sub 80% of the butter with coconut oil and the remaining volume with liquid (water).

Thank you so much for sharing this recipe. I’ve used it so many time and the last time I added half 100% chocolate and half white chocolate which surprisingly didn’t have much carbs but it helped sweeten the bitter dark chocolate. Also I eat it warm with whip cream kinda like brownie.

Instead of the eggs, if you add in powdered almonds and finely grated dried coconut you can make chocolate truffle balls...just roll them in cocoa powder and sit them in the fridge for a few hours! Love your videos! PS. I don't have an oven so I bake my cakes in a non-stick frying pan on the lowest heat...once it's started to 'set' you simply transfer it onto a plate and flip it over in to the pan to cook the other side like an omelette!

I love this diet,thank u so much for the recipe ! Carbs made me feel tired,bloated,and my stomach was a mess and many other problems ... Fats and protein are goals ! It is not true that fats make u fat! and then carbs =sugars so not healthy at all if u eat for breakfast oats then for lunch pasta then for a break a sandwich and then for lunch noodles...all this sugar... and I'm Italian !lol Carbs like pasta,bread,corn,rice,legumes,pizzaa.. even glutenfree are made 80% of sugars,so it's like you eat 200 grams of White sugar a day! Insane! It's sensible because we discovered wheat only 10,000-8,000 years ago ,before this time we used to eat only meat,fish,vegetables and some fruit and this is how now people get ill so easlily of cancer,diabetes,cholesterol,alzheimer and other many bad illness. Wheat is not the only source of carbs... To say it all(cancer and other illnesses) started with wheat and before that humans had a carb free diet doesn't sound right to me.
I'm not saying it can't be part of the problem, but it's probably cause by multiple factors.

So I finally made this! Love it!!!!!!! Going to freeze most of it so I can have some later.
I made 2 in a row, and changed it up a bit. The first one was pretty exact to the recipe, except I had 100% cocoa and used mostly that and a little 85%. I also added some vanilla.
The second one, I added about a Tbs and a half of instant decaf coffee, vanilla, and vanilla creme flavored liquid stevia to the cream and mixed it before adding it to the chocolate. I think the 2nd one is so much better. so delicious. You gotta try sometime.
I'm going to make a cream cheese frosting just in case but it looks like it will be fine without.
I struggled with getting those yolks to emulsify. took much longer than it seemed in the video. Maybe that's American eggs for you.

Mine were fine, heres a tip !add cream of tartar (about 1/8 teaspoon per egg white), or lemon juice or white vinegar (about 1/2 teaspoon per egg white) before beating.
Best recipe ever. I love the fact no flour is used ( wheat, almond ). Almond flower is inducing inflammation.

I made this last night for Valentines Day...OMG, it was so good. I normally don't like the dark chocolate recipes as they are too bitter and I love dark chocolate candy. I made this last night- and it is METAL.
Super rich, sweet tooth satisfying and with a velvety texture similar to a truffle. I'll definitely be making this for life. Tip: add a blop of sugar free whipped topping.
And yes, I have made a vegan version of this. While it doesn't rise and is more brownie-like, it's easy and fun to make with unsweetened cocoa or 85%er, Truvia or Splenda, sugar free maple syrup, aquafaba and almond flour.
PS: Put me in the cold cake camp as well. There has to be a Celtic Frost Cold Lake joke in there somewhere..

It's a great way to lower insulin, promotes better Health by fighting inflammation, may enhance heart health by improving blood pressure, triglycerides and cholesterol levels etc... But of course, people need to think about "how to do it correctly" before starting a water fast...

Would you know what I did wrong ? The final result is ok, the cake is delicious but the texture is different and crumbles down easily... Cooked this one up and it was super terrific! Only used 100g of 90 percent chocolate as I didn’t want it so rich. It was really lovely, like a slice. Then I iced it with heavy cream and a no sugar chocolate powder beat together. So yummy in my tummy.

Tomorrow is me and my boyfriend’s first birthday together (yes, we have the same birthday) I tried this recipe out tonight and at first, the chocolate ganache spitted. It wouldn’t work no matter how much I beat it. But I put it back on the bian marie for a few minutes until heated through and add a splash of warm milk and beat on high.. it fixed. Then I quickly fold the whipped egg whites and put in the oven... the cake came out perfect! I love it so much! Thank you xx
