    For those concerned, here's why jams need so much sugar: preservation.
    Pure/granulated sugar is a desiccant, meaning it binds water. It dehydrates things it comes in contact with (much like salt), which makes it very inhospitable to microorganisms like bacteria and mold, which need water to grow. This is why pure sugar never spoils. The cooking process of making the jam kills most of the microorganism, and if it's put into an airtight jar, the sugar will bind the remaining water content and prevent anything nasty from growing. But if the jar is not airtight, even the humidity in the air can cause mold or bacteria to start growing, so you need to keep your jars refrigerated after opening them.
    Also, even if you have health concerns, *do not* decrease the amount of sugar you put into the jam, because it will compromise the anti-septic effect. If you absolutely must, (or you are diabetic and must use sweeteners and gelatin instead of real sugar) keep your resulting jam refrigerated at all times and consume in a few days or else it *will* rot/sprout mold.
    As a side-note: consuming sugar does not directly cause diabetes. Type-1 Diabetes is the body's inability to synthesize insulin, the hormone which breaks down blood-sugar. This is either something you are born with or develop in early childhood due to some illness that affects your pancreas. Recent studies suggest that Type-2 (or late-onset) Diabetes is actually not the lack of insulin production, but it's actually insulin _resistance_ which is linked to the huge amounts of starch we consume with processed foods. So, if you are already diabetic, consuming sugar can be detrimental to your health, but it will not cause diabetes on it's own.

      As a food scientist I agree. I just want to point out a common mistake in home canning. When filling the jars, it is important not to overfill, but leave what's called a headspace, between the bottom of the lid and the top of the food. Headspace is a key factor to achieve a good seal.

    Sweet memories of my childhood when my Ukrainian babushka gave me a task to collect as much strawberies as I can for this jam. I was collecting all day but it was always worth it. I showed her this video now and she felt as much as nostalgic as me so she made it once again.

      Reminds me of being a kid, I was in middle school right around the time the "modern warfare" gaming fad started and some friend started a game where he'd randomly lob a grenade shaped object (dirt clod, avocado, etc) near a group of people and then shout "frag out!" or "grenade!" and judge us based on how we reacted. I suspect the game mostly existed as an excuse to pelt people with garbage and then insult them for cowardice in the face of danger if they complained, but it was kind of funny watching a bunch of 12 year old boys randomly dive in 5 different directions because someone threw an avocado at them. The teachers cracked down on the game in jr high after 2 boys accidentally rammed head first into each other.
      The good old days, when grenade safety at school was a game instead a real possibility.

      I am literally at the finale of making this recipe and getting the foam out was the toughest part.
      And i was questioning why i did it and (maybe) overcooked the jam.

    0:55 Babushka came to Italy to have a cooking contest with Italian babushkas, the one who cooks more food wins!
    ...It was a tie, huge amounts of butterbrod, kompot and lasagna were made and the Italian population had gained so much food (and weight) they decided to reward Babushka with jars for kompot and coffe to stay awake and cook in case Boris was hungry in the middle of the night. I am Italian and this is what's written in our history books 100% accurate.

      Fox Butt My Dedushka used to make the best pear bread before he passed away. It tasted of cinnamon and pear and nut and bread. And sugar and deliciousness. And love. And he made the best sweet, hot lemonade for drinking in winter.

    My babushka made blackberry jelly. My mother who recently became a babushka after the birth of my nephew makes blackberry, blueberry and muscadine jelly (For those who don’t know, a muscadine is a very sweet type of “wild” grape with a distinct flavor that grows well in poor soil. It makes a delicious jelly, pie filling and wine)

    6:34 long time ago my mom made some jam, and put it in the fridge. nobody noticed that small jar for a long time, until i found it by some miracle *three years later* , and it was still good (i actually made a lot of sandwiches whit it). Also, i think my "babushka" has a jar of jam somewhere that is at least *twenty* years old, but i think that's definitely not edible anymore.

      Its edible, dont worry just remove any mold on top, with like 2 cm of buffer between the mold and where you eat it

      3 years is nothing at all for good jam.
      20 years is somewhat critical but still edible. (If done right, but ба́бушка usually nails that)
