    ► Recipe: Takoyaki 🐙
    * 250g all purpose flour
    * 400ml dashi
    * 2 eggs
    * 1 tsp soy sauce
    * ½ tsp baking soda
    * 1 cup minced white cabbage
    * 1 cup minced spring onions
    * 2 Tbsp benishouga
    * 1/2 cup tenkasu
    * 1 cup boiled octopus, cut into bite-sized chunks
    * 2 Tbsp okonomi sauce / takoyaki sauce
    * japanese mayo
    * nori seaweed, crushed to flakes
    * bonito flakes (katsuobushi)

    For anyone who wishes to get a Takoyaki pan but has an electric or indication stove: You can easily get a dutch 'poffertjes' pan (they are basically pancake balls). They are easier to find and usually cheaper than takoyaki pan and are basically the same. Get the type that you can plug in (like a waffle iron), it's so versatile! When I have people over I use it to make appetizers like olive bread balls etc.

      its hard to get only if you dont live near asia alot of the islands near asia (in melenesia and Micronesia) including our favorite over looked U.S territory Guam have alot of asian influence there for i already own all of these ingredients and i can go to my local super market for more dashi or i can buy takoyaki ... like anywhere.

      @@FBR2169 its a liquid dashi, you have to shake before use.

    Next time you are in Japan, visit Osaka for the takoyaki (and other street food). The tokoyaki in Tokyo (when you can find it) is over-cooked and more about the toppings that getting the crispy:soupy ratio right. In Osaka they are a prominent fixture of the street food scene (the only large city in Japan that really has street food). And the desired consistency is so soupy in the middle that you can’t even pick them up with chopsticks. You have to spear them with a toothpick and drop them in your mouth like a baby bird eats a worm. I have burned my mouth too many times to count on these little balls of joy. I cannot find a convincing version outside of Osaka.

    So yeah, I made these tonight. Came out AMAZING. Better than the frozen pre-cooked ones I usually buy. So easy to do, no special pan needed. Thanks so much!

    Oh shit it was me! Dude this video had the hype at the beginning and the idea of takoyaki with no pan is so smart! I am definitely going to try this some time in the next couple of days. I dont wanna buy a takoyakipan so expensive for one thing lol

    Love it, but instead of adding all the fillings to the batter and mixing it all together, instead add your fillings to the batter filled ice cube trays.
    That way, each individual one gets a nice portion of octo and everything else.

    I've had takoyaki in Kyoto. It was stuffed with just octopus, topped like an okonomiyaki. The inside was fascinating, very gooey, half-liquid even. It was absolutely amazing, especially when consumed near a shrine during a summer downpour. Please, take me back do Kyoto

    In Osaka, they add cheese in their takoyaki batter. It tastes very good. I like to add grated parmesan rigiano to my takoyaki batter.

    Love the idea! But the middle should've be a bit creamy, maybe less time in the fryer might do the work?

      I'm not sure if thickening the batter was a necassary step, since it should be frozen all the way through before frying and that should help with a creamier texture. It's worth experimenting if you're wanting a more traditional takoyaki!

      What makes it creamy soft was that they added Japanese mountain yam , supposedly the only yam you can eat raw also the exact ingredient causing the melty texture

      Also no baking powder since not cooking that through is a disgusting flavor. Maybe not using wheat flour would make a difference? Now I want to try this, but with a different kind of flour and possibly a hotter oil?

      Gear-it! Nah, I've made it creamy without the mountain yam before. Apparently you can sub it with potato starch, but I've personally never tried it.

      I actually prefer mine more cooked. I can't do the gooey halfcooked pancake texture!

    My good friend you, are a GENIUS. I was really wanting to make some and simply don't have/ can't get a pan (I also can't get octopus but I have precooked shrimp I can use) Now I'm so excited I think this'll be fairly easy to do with the ice cube trays

    Oh man.. it is like 2:38 AM right now and I am watching all of your vids. It is amazing how professional you do your videos and how sympathetic you are. I am living in Berlin but traveled almost all over the world. On RUclips you can find that people eat special delicacies from all over the world. What is weird tho is that there is almost no videos about the delicious multi cultural cuisine of Berlin. I saw you video about the doner kebab and I wish you could do more of this videos. Maybe sushi, Taiwanese, French, desserts and so on. Pumped to see what's coming next and if you plan a meet up in Berlin just let me know ;)

    I have only had takoyaki one time from a food truck in a town I don't get to often (I live in the US so it was totally new to me)....but it was AMAZING! I could eat those things every day and be happy! I really want to try this. I thought the same thing about the pan. I am not an avid cook and I didn't think buying a pan for just one thing I may or may not end up cooking a lot might be a waste of money and space. But this is a great solution! Thank you for this. I'm totally going to try it.

    Octopus is definitely my favourite takoyaki filling. But cheese and mayo mentaiko (cod roe) work really well too 🥰

      I'm pretty sure æbleskiver pans will work well, I can't find one myself though.
      No store sells them in Poland aside from online and the imported ones are more expensive than actually buying them in Denmark.

    Wow, amazingly well done!
    Other than the octopussies I think I have everything on hand to make this too, including the kombu and bonito to make my own dashi. Although, I'll be using panko, toasted and coated with a bit of oil if I can't find the tenkasu, and my ice trays are an unfortunate football (that's Uhmurican-hand-egg mind you) shape.
    I don't know why, but despite being a big fan of, and having made okonomiyaki several times, I've never even thought to try making takoyaki before. Thanks for the inspiration.

    This is exactly what I wanted to know! I don't want to buy a device or cast iron pan just for this. I adore fair food indulgence once in a while but not enough to commit to it (ew). I'd love to be able to give it a try, maybe with shrimp or something (ebiyaki is a thing already) since I can't get octopus at my local store, being as inland as you can be in the US. I'm excited to try this!

    phew! killed it again andong! :O i began guessing if you would use ring molds or SOMETHING to shape the batter in-pan, but this sounds promising. I'm really trying to lay off deep fried/shallow fried foods, though (for safety, economic, and health reasons). How do you think this could be modified into an oven recipe? Since oven-baked croquettes have become a thing as of late... In any case, I'll try it out!

    As much as I love the taste of octopus, my favourite filling is deep fried octopus shaped hot dogs and scallions. They have to be really little though, like you cut them into 1" pieces and then cut the 4 legs on one end, then deep fry them until crispy, and then that's what you put in the Tako-Sausage-Yaki

    Pretty unique takoyaki you got there! Liked your solution, even though you didn't make dashi from scratch! If I were to do the same, I'd probably make a slightly thicker batter, freeze it until above milkshakey, and use a melon baller to drop right into a frying pan to shallow-fry.

    A restaurant Flipped Story, in Tilburg, Netherlands, is where I first had takoyaki and I was BLOWN away. It's my favourite Japanese food, and they had fillings made of octopus and shrimp(??) and they were both delicious. I still dream of making it myself sometime

    So, on my birthday my familiy and I went to a Japanese reataurant and I was so happy when I saw that they had Takoyaki on the menu. So, I immediatly ordered some and I wasn't sure if I would like it, as I don't really like sea food (I do love sushi tho xD). But when I tried it I was absolutly blown away! It was soooooo amazing. I've wanted to try takoyaki for such a long time, because I saw it so many manga. I can only recommend it, it's so great! And now I have a recipy. Thanky ><

    I always get the frozen ones and microwave them for like 1-2 minutes until kind of soft and then crisp them up in some hot oil. If you don’t overcook, dress them up with bulldog sauce, kewpie Mayo, bonito flakes, and some of that dried seaweed powder if you want and they are amazing and have the perfect creamy texture with nice chunks of octopus. Best part is, it only takes about 5 minutes start to finish for awesome takoyaki

    By the way, tenkasu is actually really easy to make. You just need to make tempura batter, then use a chopstick to drizzle it into a pan with a lot of oil. Then you can break it up into smaller pieces if it's too clumped up.

    Hey AnDong, love your videos! I have one New Year's challenge for you:
    I tried so many times to make hand-pulled noodles at home - however, whatever I did, they would tear the moment I tried to pulled them. I tried different flours, many different ratios of ingredients... However, I always failed.
    So my challenge is: can you manage to make them at home?

      Silly question, but did you rest the dough enough? Gluten needs to develop.
      Also lye water seems to help (i just baked baking soda to make kansui)

      ​@@alexgade4512 In addition to that, using scalded flour (flour mixed with boiling water), or better-yet using water roux (boiled flour), to get a higher-hydration flour, which to be stickier and stretchy, might also help with that. You can research yudane / scalded flour (flour mixed with boiling-hot water) and tangzong / water roux (boiled flour) on youtube.

      As I replied to the person who replied to you, you could try using scalded flour (flour mixed with boiling water), or better-yet using water roux (boiled flour), to get a higher-hydration flour, which to be stickier and stretchy, might also help with that. You can research yudane / scalded flour (flour mixed with boiling-hot water) and tangzong / water roux (boiled flour) on youtube.

    I made a version using surimi instead of octopus (octos are too smart to eat, imo) and they turned out fantastic! Super easy too!

    I went to that same izakaya 'Arupusu' (Alps) you went to Andong and omg has to be one of the best in Shinjuku. It's so addictive, I ordered like 4 or 5 plates of Takoyaki (as well as everything else on the menu) And the beers were like 150 yen or something ridiculously cheap

    The pan is easier to get than the ingredients. I got my brother to bring a pan and all the ingredients from Japan but I have no sauce. Any ideas for a substitute for the sauce?

    I wanted to try takoyakis myself, but I wondered if I would use my silicon spheres molds for it

    The Japanese have a strange affinity for gooey textures. I found this out, the first time I had takoyaki at a food stall in London. It felt like it hadn't been cooked properly in the centre. Yours look so much better and I'd love to try your recipe.

    I also put cubes of melty cheese, Konnayku (better preseasoned), squid(seafood), mochi, kimchi, corns, edamame beans etc
