It is as important as butter is needed for croissant dough. Generally, granulated versions (such as Hondashi) are used.

I used to get takoyaki on a regular basis when I was stationed at the Yokosuka Naval base in Yokosuka, Japan 20 years ago... Seeing this really makes me miss Japan. I really need to see about planning a trip to go back sometime soon.

This dish is really similar to a danish dessert called "Æbleskiver" (Apple-slices). Where we put in cinnamon covered apples instead. Its usually eaten during Christmas. :)
