Hello there, only recently found your channel, my husband works in an old folks home as a maintenance guy, to raise money for Alzheimer's the workers did a charity cupcake bake day which was today 13th June, I got him to make these strawberry cheesecake cupcakes to take, struggles to make a cup of tea. Well he only went and won tastiest cupcake! One of the tasters absolutely loved the strawberry goo! Thank you Jemma x over £100 raised so far x
If you live in a hot climate, whipping the cream cheese with the butter, the icing will end up gloopy & runny. Whip your butter, add icing sugar THEN add cream cheese last. Whipping only on super high speed until combined. It’s the only way!
You can also add, 1 tbs at a time, Jello Cheesecake or White Chocolate Instant pudding mix. This helps stabilize and firm up the frosting. If it's a little grainy at first, don't be alarmed. The pudding mix WILL absorb and smooth out into the mix. I live in Orlando FL so I have to have a whole tips and tricks box for baking in the heat and esp the humidity! Good luck!
Oh my word! So I'm living in Denmark and coffee and cakes on a Friday is a big thing, so I'm always looking for different recipes. I'm having trouble with flour here as I can't find self raising flour, and I'm having to add extra baking powder, which isn't quite working. That said, these strawberry cheesecake cup cakes were amazing, I wasn't sure about the lemon, but went with it, wow, huge hit, loved them. I'm going to be trawling through your videos now, you have another subscriber. Thank you, so so much 😊

Now when we need to "bring a plate" to an event, I'm always asked to make those cupcakes! This recipe has a few tweaks from the book so I'll try this next time. I made these. I ordered the Golden Syrup and the Hobnobs. So in total, it was quite expensive to make 10 cupcakes. They came out very heavy, sunk in the middle and the crumb was very coarse. The recipe for the icing was enough for 20 cup cakes but this recipe for the cupcakes only made 10. I don’t know what went wrong but the next time I would use cake flour instead of self rising flour and would eliminate the hobnob crust.

Cream cheese is just yoghurt with the liquid drained off. Place natural yoghurt in a muslin bag, place in a sieve and sit over a bowl in the fridge until all the liquid has drained off.
So good! My only thing was that my cupcake papers were kind of big so I ran out of batter. Id recommend making a double batch and having 12 plus a few. Other than that - a-mazing. Jemma, I always love watching your weekly video and have made some of your recipes successfully. My all time favorite is your sea salt caramels! Can you tell me where you get your spatulas or bowl scrapers? They look nice and flexible yet firm enough to really clean the sides of your bowls. Thanks and happy baking!

Not Jemma but yes, it's called German buttercream or creme mousseline! I actually saw it in her sticky toffee cupcake video and her Boston cream cupcake video 😊
Hi jemma! Great recipe, thanks! Have you tried using freeze dried raspberries and strawberries for your cupcakes or cakes...? They're so intense in flavor, especially crumbled on top of buttercream. The powder is great In Macarons, i Love making raspberry, with lemon buttercream ones. Maybe Dale can experiment, and make some videos for us..?!!
Not sure if anyone can give me advice on a alternative to lemon zest in this recipe? I may be allergic to the skin of citrus fruits so try and avoid it until I can be sure haha. Any suggestions? It seems a shame to not have the lemon flavour but if I add artificial then itl make the mixture more wet 🤔

You can buy golden syrup in coles in Western Australia. If you look in the English food section you can get one that is made in England.
