The most frustrating thing about this show is that Chris's palette is always correct. But instead of listening to his own palette he makes a choice based on what he would do if he was making the dish. Lol CMON CHRIS. Trust yourself!!!
I was demoralized to find the pasta aisle empty, and that's when I checked the ethnic/kosher food section. Wide egg noodles-- exactly what I was looking for! Resisted the urge to horde 😇
I want another element in the process. After Chris has finalized his dish, give him the name of the dish originator and have him make another version based on what he knows about the recipe creator. I think this would be great because chefs do have habits and flavor profiles. It would be nice to see that discussion. Enjoying this series.
i woke up like “ugh, another day in quarantine” but then i got this notification and got instantly excited and happy!!! thank you BA for all that you do, we appreciate you even more during these tough times 💖
@施亮 last day? Your quarantine is ending already? You're lucky...things are still escalating here in Seattle (Washington state, USA). Where do you live?
Because celebrity chefs eventually become about the show and are all attitude while Chris has always been about getting it right. Not just here, but in general.
@@recoil53 agree. I remember a video where they are critiquing Gordon's method of cooking scrambled eggs. And I'm more inclined to the ideas of BA chefs.
Not even close. This is a Bobby mass appeal recipe, so you can't judge him on it. Bobby is a proper chef. It's like looking at Ramsay's garbage recipes and saying Chris is better.
I think it's hard to pin down a good definition of "better" in this context. Both men can make delicious food, no questions asked. However, I doubt this dish was developed to display the full cooking skill of Bobby Flay, rather it was probably meant to introduce a simple, modified form of carbonara to people who've never even heard of the dish. Just like many of Chris' recipes are meant to make certain dishes more accessible to a wider audience of people.
Chris: “That we have to live in a world that is so cruel that we have to wait until June to see that movie, I just don’t know that I can take it.” Ali: “It’s okay, it’s going to be here before you know it” Chris: “Is it though?” *Coronavirus has entered the chat*
At 11:05 they watch the Top Gun Maverick trailer and he laments how he has to wait until summer before he can see. Then she says “it’ll be here before you know it” or something to that effect. And then the world shut down and it didn’t come out for two more years. 😂😂😂😂😂😂😂
This episode was so upsetting. He got so stuck in following ‘traditional’ ways to make this dish. He knew the fact that parsley meant this dish was not being made in a traditional way. It was rough watching him get in his own head and stick to his guns, even when he self admittedly said it felt wrong. That being said, he’s still an excellent and knowledgeable cook.
I love how the further into the series we get, the more it seems Chris is not recreating, but trying to make it objectively better. Idk thats what I've been seeing the past couple videos at least. Is this recreating signature dishes or is it making blind dishes better? He bought pancetta because the grocery store was out of guanciale... yet he still found guanciale in the test kitchen 😂
Side note: I truly appreciate the fact that they also highlight the products where he’s fairly close, but not quite what the recipe is. Depending in your experience cooking, you may not recognize that peccorino is similar to parm and guanciale is similar to panchetta
Just occurred to me: this is only like 60% about Chris actually trying to recreate the recipe. It's also about recipe development - what goes into creating a recipe the way it is, and do all the ingredients strictly need to be there?
@@SoKette that's because bechamel is made with butter. I'd also question the pork fat. Sometimes I'll continue to cook with it if I'm using a pork product, but that comes down to personal quirks. A purist would start bechamel with butter.
on the other side of your thought - is it really necessary ingridients on the original recepie in? like - 4 or 5 kind of cheese, when u got 2 strongest ( like parm ) and 1 meltiest? and fat -i can tell the diffirence if u fry an egg in bacon fat or butter, but im shure i cant define who is who in case of baked carbonara recipe, because the kind of preserved pork in that dish ( or panchetta or other pork belly\breast etc part)
Valery Ivanov agreed. Kind of like how when he recreated Roy Choi’s tacos, half of the ingredients in the sauce were in such small amounts they didn’t impact the overall flavor (mirin, kiwi, etc)
@@ninaasf-ck lmao a "purest?" Bechamel is only made 1 way. If its not made that way, then its not bechamel. Once we stop obeying the boundries of "definitions"... Nothing will have any meaning. Why not call a bechamel a " donut " or a "steak" ?

right? Gaby is adorable.
Yeah, let's not throw any more pens at her.
The most frustrating thing about this show is that Chris's palette is always correct. But instead of listening to his own palette he makes a choice based on what he would do if he was making the dish. Lol CMON CHRIS. Trust yourself!!!
I really want an uncensored clip of Brad and Chris' panchetta conversation.
That’s the truest thing I’ve ever heard anyone say about Asiago: “Asiago everybody’s heard of it, nobody knows what it is”.
I know, it's a cheese! :-D
It's something they put in bread to make it more expensive
Just watched a documentary on it the other day.. (puffs collar)
13:02 chris: "im doing it for you, brad"
me: NOOOOOOO DONT DO IT FOR BRAD
I feel like Chris is all about the dramatic intros and slo-mo walks whereas every other test kitchen chef would be like "ABSOLUTELY NOT doing that."
Gaysian FLIP hi
Um.. Rick?
It all makes sense now that we know Top Gun is his favourite movie of all time.
@@bobunitone Rick's would be less intense and would probably require a Beyonce fan.
I can see Brad wanting to do a slow-mo walk for an intro. Along with an 80's power ballad.
Chris Morocco is the OG. The most gangster Chef of them all, and that's why he's the Director of the Test Kitchen.
I thought gabby or Brad was.
@@AngelCosta gabby is the manager, Brad used to be, not sure what his position is now.
delciotto Brad is the Test Kitchen Video Host, due to the current credit of BA magazine
What about Carla?!
Chris nose best
chris' absolute hyperawareness about the editing and graphics is genuinely so amusing
Man they really like shafting Chris with multi-cheese/multi-chilis, ingredient dishes.
I hate that, he knows hes never gonna get them.
They just like filming him be wrong in a grocery store
imagine a pasta isle being that full.. those were the days..
Pasta isle, that's the island I want to quarantine on!
(It's aisle)
Now only penne lisce remains
I was demoralized to find the pasta aisle empty, and that's when I checked the ethnic/kosher food section. Wide egg noodles-- exactly what I was looking for! Resisted the urge to horde 😇
@@Margar02 You and me both! We'll split in half, there'll still be plenty of room. And semolina.
I love how he's said in every video that he hates guessing cheeses, and every video it seems they do a dish with more and more cheese.
"Theres a big piece of something on your finger" 12:47
Chris: THIS ONE DAN?
Gabby: surprised pikachu face
If this was an idea for a T-shirt, I'd buy it! 😂😂🤣🤣
Chris one day earlier: "I don't trust this mask, it can't be something that'll scare my kids"
Chris is such a savage out of absolutely nowhere sometimes
Gabby be like: Swearing? There's just no f***ing need for that Sh*t.
'macaroni and cheese carbonara'
everything Italy's going through right now and you do this to them?
LOL so true. I'm italian and cringe at some recipe but I'm still here for the BA's Team anytime! 😅🙌🏼
It’s Bobby’s fault.
i was gonna write the exact same thing lol
It's hardly the first Italian dish an American has bastardized though lol
of course bobby flay would use garlic, parsley, and pancetta in a dish and call it a carbonara smh
I want another element in the process. After Chris has finalized his dish, give him the name of the dish originator and have him make another version based on what he knows about the recipe creator. I think this would be great because chefs do have habits and flavor profiles. It would be nice to see that discussion. Enjoying this series.
I like this idea alot
The editors on this show deserve a raise. This is art in its truest form.
I feel like the way things are going, they're eventually going to have him recreate a fondue or something and he's just gonna jump out a window.
FONDUE

❌Asiago
❌Asadero
❌Gruyère

"no pecorino?" has the same energy as that vine where the kid smashes his phone
Red Leicester is Chris' Vietnam so he probably panics everytime he enters the cheese section.
I mean! Who doesn't guess Red Leicester first???
* red leicester flashbacks *
Someone at BA needs to explain how the "taste" rubric is calculated on the early versions.
others eat it and rate as well ?
How does Chris do this without even TAKING A BITE OF THE DISHES HE JUST PICKS AT THEM WITH HIS FINGERS
i woke up like “ugh, another day in quarantine” but then i got this notification and got instantly excited and happy!!! thank you BA for all that you do, we appreciate you even more during these tough times 💖
alex p hi
Just curious, where are you quarantined at? & hang in there!
Same. I'm in Seattle. Curious where the rest of y'all are, though!
@施亮 last day? Your quarantine is ending already? You're lucky...things are still escalating here in Seattle (Washington state, USA). Where do you live?
And then I saw the shelves and shelves of pasta and thought of my local supermarket where there are just empty shelves where the macaroni should be.
Chris: "I don't want to get a trophy every day, I wanna get better and learn more."
Claire: "So did you win?"
Hahaha. So true. Claire MUST win!
Chris is amazing as always, but can we just get a moment of appreciation for how low-key gorgeous Gaby looks at the end of the video?
Gaby: "I like yours better"
Naturally. I don't know why but I see Chris being a better chef than Bobby.
@@vadalia3860 super underrated comment right here
Chris: “That we have to live in a world that is so cruel that we have to wait until June to see that movie, I just don’t know that I can take it.”
Ali: “It’s okay, it’s going to be here before you know it”
Chris: “Is it though?”
*Coronavirus has entered the chat*
Bruh
You just put my thoughts into words. lol
Why does this not have more likes? 🤣
corona to chris: are you in the right headspace to receive information that could possibly hurt you?
At 11:05 they watch the Top Gun Maverick trailer and he laments how he has to wait until summer before he can see. Then she says “it’ll be here before you know it” or something to that effect. And then the world shut down and it didn’t come out for two more years. 😂😂😂😂😂😂😂
I just want to give Gaby a hug. She's so adorable.
I laughed when they tried to edit a clip of Gaby laughing to make her look evil. Making Gaby look evil is pretty much impossible.
Smush
4:01 "There's literally so much cheese in this supermarket."
Must be nice to have lived in the before times.
Actually there's still a buttload of cheese at my local markets 😂
This episode was so upsetting. He got so stuck in following ‘traditional’ ways to make this dish. He knew the fact that parsley meant this dish was not being made in a traditional way. It was rough watching him get in his own head and stick to his guns, even when he self admittedly said it felt wrong. That being said, he’s still an excellent and knowledgeable cook.
This episode really should be called "Dragging Bobby Flay's Mac and Cheese for 22 Minutes Straight"
Valeria Gil they're right for dragging him
It looks tasty and all I want to eat during quarantine
Chris: Doesn't feel right about the parmesan & pecorino topping after both version 1 & 2
Also Chris: Still uses parmesan & pecorino every time
LOL
Chris-"It can't be something that's gonna freak out my kids."
Proceeds to throw out the F-bombs ;)
Yep, he's a Dad!
The whole “MANGOOOO” situation just got repeated when Brad said “it’s a sad cow” instead of a pig.... God please his soul😔
it’s at 8:01 , you’re welcome
I legit think he misspoke.
@@freannde he always does

@@-Sean_ And we love him for it.
The use of graphics as a tool of passive-aggression is getting ridiculous and I love it. 10/10
This was the best part of this show when Chris goes shopping. Bring it back! 3:57
I’m still waiting to see Chris crash his cart in the market...
It will never happen. Clearly he mastered cart riding as a child.
chris started off looking like the good, family friendly guy, and now he's swearing like sailors and im all for it
I love how the further into the series we get, the more it seems Chris is not recreating, but trying to make it objectively better. Idk thats what I've been seeing the past couple videos at least. Is this recreating signature dishes or is it making blind dishes better?
He bought pancetta because the grocery store was out of guanciale... yet he still found guanciale in the test kitchen 😂
Came for Claire, stayed for Chris and almost everyone in BA.
The intros for these are the best. They should add a slow mo of chris riding his shopping cart
Side note: I truly appreciate the fact that they also highlight the products where he’s fairly close, but not quite what the recipe is. Depending in your experience cooking, you may not recognize that peccorino is similar to parm and guanciale is similar to panchetta
He gets more and more accurate with his first impressions everytime it makes me scared and excited
Brad rolling up on his colleagues with the energy of a bored ten year-old...
Even in the first round of tasting it's always so impressive. His ability to pull stuff out like mac n cheese on smell and carbonara riff is no joke
Just occurred to me: this is only like 60% about Chris actually trying to recreate the recipe. It's also about recipe development - what goes into creating a recipe the way it is, and do all the ingredients strictly need to be there?
I liked how much he doubt about the pork fat, but then never questioned the butter he added :p
