    I feel like Sohla knows all there is to know about everything. Every episode, be it pasta, tempered chocolate, spices, anything... Everyone ends up going to her for guidance. She is amazing!

      @@maxgamesst1 she used to be a regular on alton brown's show (I think) and opened her own restaurant in brooklyn that folded (complicated, also all restaurants in brooklyn are meant to die). She is a super legit chef with experience and trained at culinary school.

    I love that Chris had the opportunity to discuss the ingredients and techniques that he used with the creator. Very interesting and adds another layer to the dishes overall.

      Kelly Young and to hear her feedback! I’ve wondered in a lot of the previous eps what difference the swaps Chris ends up making really have on the dish, and having Madhur there to explain the ones that do and don’t effect the dish in certain ways was so cool!

      @@ronaqsahni5343 coriander seed powder is often simply referred to as coriander. Americans call the actual flower cilantro, brits and most europeans call it coriander. In this video coriander was for the seed powder, and cilantro for the leaf

    I love the evolution of Chris's personality throughout these episodes. The first one he was more reserved and kid friendly and now he's swearing left and right and letting his sarcasm flag fly 😂 😂

      I’d say his expertise is Cajun food (New Orleans and southeastern Louisiana) at least that’s his choice cuisine in multiple favorites videos. Also his hot sauce preference.

      @@joshburger2217 i love that there are so many options for our meat-free friends, but they are always kidding themselves when they think anything is actually a full substitute that would fool people who eat meat. It only tastes like meat to you cuz you haven't had a real juicy burger in years LOL. A chef especially could tell the difference I'm sure.

      Boopydoot its never going to taste exactly like real meat, but it doesnt mean it does taste good in its own way! in my experience people that are vegan or veg don’t necessarily want the taste or texture of meat esp in burgers when its a bit bloody sometimes

I was being facetious about people who haven't had meat in a long time telling meat-eaters something "tastes like the real thing" when sis it doesn't XD. Of course it can still taste good!     I love how she, legendary chef, has absolutely no trouble admitting something about Chris' dish is better. Not even a hint or pretentiousness. And Sohla being a buzzing bee of chaotic good in the background. This is my favourite episode in this series by miles.

      Have you ever been to one of those restaurants where there's absolutely no light? There's a chain called 'Dark Table Restaurant', the restaurant is completely pitch black and visually impaired servers guide you through your meal. I went to one a few months ago, and I chose the 'surprise me' menu option. I could not tell, at all, what I was eating. I couldn't identify the meat, the vegetables, the wine or the dessert. Since that experience, I am humbled and also incredibly impressed with what Chris does.
