I take mine and lay them flat onto the cutting board with flower to the thickness that I want and then I use a greased biscuit cutter that seems to work good for me🙂

Great recipe, very similar to how I make mine and I use greek yogurt with seasonings but also like light sour cream with seasonings (garlic/onion powder and dill are my favs). Then throw a couple sunnside up eggs with crispy edges and I'm in tater cakes heaven. Thanx for renewing my love for these tater cakes!!

I was in Russia years ago and I ordered blini (small Russian pancakes) that were served with sour cream, fresh dill and a small amount of salmon caviar on top. It was a really nice flavor combination. If you’re not opposed to eating fish eggs, you should give it a try someday with your potato pancakes. Salmon caviar which is orange is relatively inexpensive compared to the notoriously expensive black beluga caviar. Awesome show!

If you have leftover canned pumpkin after Thanksgiving, you can add some of that to the mashed potatoes. Potato starch is an alternative to flour as a binder for the potato pancakes. As you mentioned in the video, it is hard to judge whether you are adding too much flour to the mashed potatoes because of the water content in the mashed potatoes. Potato starch is more foolproof. I chill the batter for at least an hour before shallow frying to allow the binder to absorb whatever water is in the mashed potatoes.

Pls help me ! I blended my potatoes and now they are like a batter . Pancake like batter . Do I add more flour ? It’s so wet that I can’t make any shape or form out of it. Can I make it into a fry shape??
You can fry them on lower heat and slower then the bits wont get so black, those black bits are burned and taste very bitter, not criticizing just trying to help. Your heat was too high sweety, you can also flip more times so they fry evenly
I'm sorry! I just have so much to say and I can't seem to get it all out in a shorter time frame. There's just so much information that you need to have so you can make the best possible mashed potato cakes. I wouldn't want you to go through all of this effort and have a failed recipe. I was thinking of using this as bottom of a casserole. Put this in bottom the pour a can soup mix over it and top with corn bread.
