Perfect served with hot Basmati Rice and/or Rotis and Naan!

INGREDIENTS
1.5 lb, cubed Lamb
1 tsp, Garam Masala
1 tsp, ground Fennel
1 tbsp and 1 tsp, Kashmiri Red Chilli Powder
1 tbsp and 1 tsp, grated Ginger
1 tbsp and 1 tsp, grated Garlic
2 and 1/4 cup, Plain Yogurt
1/2 cup, Canola Oil
3 inches, Ratan Jot (Alkanet Root) broken into pieces
1 tsp, Fennel Seed
1 tsp, Black Pepper Corns
3, Black Cardamom
6, Green Cardamom
6, Cloves
1 Cinnamon Stick
1 large Onion, thinly sliced
3 cups, Water
Salt to Taste
METHOD
In a bowl, combine Lamb, Garam Masala, ground Fennel, 1 tsp Kashmiri Chilli Powder, 1 tsp Ginger, 1 tsp, Garlic, 1 tsp Salt, and 1/4 cup Yogurt. Stir to combine. Cover and refrigerate for 30 minutes to 24 hours to marinate.
Place Rattan Jot in a heat proof bowl. Heat 1/4 cup Canola Oil and pour over Rattan Jot. Allow to steep to release red colour.
Heat a heavy bottomed large pot with 1/8 cup of Canola Oil on high heat. When oil is hot, add Lamb and cook for 15-20 minutes until browned on all sides. Transfer to a bowl and set aside.
In the same pot on medium-high heat, add the remaining 1/8 cup of Canola Oil and allow to heat up. Then add Fennel Seeds, Black Peppercorns, Black Cardamom, Green Cardamom and Cloves. Toast for 15-20 seconds, or until Cloves puff up.
Immediately add the Onions, and cook for 10 minutes until softened and browned. Then add the remaining Ginger and Garlic and cook for 1 minute.
Return reserved Lamb and any juices that may have accumulated in the bowl, back to the pot along with 2 cups of Yogurt. Stir well to combine. Then add Water, 1 tbsp Kashmiri Chilli Powder, and Salt to Taste. Strain the Rattan Jot oil, and transfer only the coloured oil to the curry.
Cook partially covered on medium-low heat for 1.5 hours or until Lamb is tender, and sauce has thickened. Taste for seasoning and add more salt if necessary. Enjoy! :) - Хобби
just received rattan jot after ordering it 2 weeks ago on amazon. This was the best curry I have EVER made in 40 years FAB
I felt in love with Indian cuisine because of you 😊...lots of love ❤
what an amazing dish ! I made it a few weeks ago and It came out better than our favorite restaurant's version. I'm making it again today. Thank you so much Vijaya,
Glad you made all these videos. They're truly recipes good enough to make again and again. I'm going to make them when I get back to the states
Very well made video. Nice to see someone staying true to the authentic recipe using Ratan jot for the Roganjosh. Great job.
This gravy looks very tasty. I am looking forward to cooking this tomorrow. Thanks for sharing :)
Hi just to say that I loved the way that you explain how to cook this beautiful dish

You're so much fun to watch and you made the process of making this so simple. I subscribed :-)
This is the best curry I have ever had. It's actually quite easy to make once you have assembled all the ingredients.
Made this and it was fantastic, the colour and taste top notch, thanks, great recipe.
I'm loving your presentation for its smooth flow and ease to follow.
I love watching your videos. Amazing food, presented in such a joyous way. Thank you 😊
Made this for the first time after bookmarking it months ago, and it turned out amazing. I used less lamb (so expensive!) and less water, and I used homemade garlic/ginger paste rather than chopped ginger and garlic. I went out to a place that makes the real deal before trying to make it myself, and I am very happy with the results. Only thing I need to remember in the future - scoop out the black cardamom pods before serving!
Looks amazing. What kind of oils is traditional. I have olive & coconut oils. Could use ghee?
Hi Vijaya, today with this video i realized why i subscribed your channel. This is so amazing video. Love to try it with my family. Whatever i was looking from the spices prospective, you used everything. Love it.

Question- If you wanted to spice this up, what would you do with regard to the Kashmiri chili? Add another chili on top of it? Replace the Kashmiri chili with something else? Which chili would you use? Thank you! Can't wait to make this.

Will try. Can I use red food colour instead of Ratan Jote?
Awesome !
You're an amazing cook. You deserve plenty more subscribers. Keep up the good work! 😄
That is SO sweet. Thank you so much for your support Justin! :D
Vijaya Selvaraju No problem!
Hi I was just wondering what sort of pan are you using?
Best lamb curry we've ever tasted, let alone cooked! Vijaya do you have a chicken on the bone curry we can try please? Spent 3 years looking but can't find anything as good as this lamb was! Thank you :-)
I got a box of Shan Roman Gosh Curry Mix. For a kilo of meat [I used beef short ribs] they had me add 1 medium diced tomato and a half diced onion. 2 1/2 cups yogurt. 1 to 1 1/2 cups butter or ghee or oil. All added to skillet at various times. Into the slow cooker until falling from bones. Next morning I added a cup of milk as I reheated. Very tasty with rice. Shanfoods is from Pakistan. Perhaps there is a Kashmiri prejudice against onions and tomatoes.
Another recipe on the box called Kashmiri stew starts with a half cup of ghee or butter, fry a cup each small potatoes and onions, meat and spice mix for a while, add five or six glasses of water, , boil on low until tender, add milk or cream and simmer a bit. Serve on toast, buns, or sheermal.
I’ve seen the jars of rogan josh. Have to try some. I’ve grown fond of Indian food. There are a couple of restaurants in 5own.
That lamb looks so fresh
VIJAYA, THAT LAMB ROGAN JOSH LOOKS ABSOLUTELY DELICIOUS,I LIKE THE WAY YOU USE THE RATAN JOT, IL BE TRYING YOUR RECIPE ASAP, :)
Can you fry the ingredients in the red ratan jot oil from the beginning?
Hi Vijaya, you added a 2nd amount of Garlic and Ginger at 5.04, how much did you put in? please
Hi vijaya.. hru😌
Can we steep the ratan jot color from water? It’s very hard to get that thingy🥰from stores...but finally found the ratan jot😌👍
A little color will leach out with watter, but the deap rich color is not realy water soluable. you realy need very hot oil. you don't need as much as in vid. half of that will do if you want.
Thanks!! Excellent recipe.
Very delicious!
So happy to hear that Mark! :)
Hi Vijaya Selvaraju how about salt ? did you added ?
Did anyone else struggle to find Rattan Jot in their local Indian grocery store? I live in Florida, and it was no where to be found! Had to get it on Amazon. Can't wait to try this out!
like you it looks beautiful. I shall try this week. Thank you
Daaaaaaang, Vijaya, this looks so yummy. Great job!
Thanks Louie! Hope you get to try it :)
My mouth is watering.
I love your channel!
Hi Vijaya, Why do you not add any tomatoes?
this is the one amazing receipe...i never heard about Rathan jot...well will it add any flavour to the dish or just for color ..if that is the case can we go for kesari color instead
No flavour, just colour :)
I couldn't find Ratan Jot root in my city but found powder. Can I still infuse it with oil and strain it?
Hi, here from snapchat. Also is it ok to use regular chili powder since Kashmiri chili powder is not available here? :)
Amazing dish and equally delicious cook!
U
I grew up in the hood I never had Indian food but always wanted to try it

Hello Vijaya, First time viewer and a subscriber now. I love this recipe. I always looking new ways to cook lamb. Love rogan josh your recipe is so simple and easy to follow. I am encountering difficulty finding the ratan jot. Where do you find yours. All my indian groceries supplies in my area, don't know what i am talking about. Please help. What other ingredients can i substitute with? thanks.
Hi Sebastien! Ratan Jot is a super special ingredient, and I can understand if its difficult to find. I too had to visit a fe markets before I found it. If you can't find it, just leave it out all together and just add a little extra Kashmirir Chilli Powder :)
Can I use lamb shanks? Can I cook it in the oven?
Hi, tried this yesterday, will definitely make again. I have fussy teenagers and they agree with tis recipe, didn't mind the onion even other said is not authentic. Next is your butter chicken.
Love how you list your ingredients
Very Nice 07:44 to 07:50 - You remind me of my daughter - Great Recipe !!
