I loved being stationed in Cuba where Jamaicans (men) worked on base and cooked lots of great food: curried goat, smothered oxtails with rice and peas ( my favorites). Also boiled plantains. The key is microwaving or baking the potato so there is absolutely NO water added because it being moist is what makes it fall apart
