  • Today there is a new addition to my knife collection. This is an old rusty sujihiki knife. If I am not mistaken, it is made in China from Japanese steel. If I'm wrong, I'd be happy to read your opinion in the comments.
In this video I will try to bring it back to life.

Really brought it back to life. Only really three tools needed in the kitchen,
A sharp, good quality knife and your two hands.

That turned out incredible, really good work! I love those Shinto rasps for handle profiling, so much better to work with. Need to get myself one of those mini anvils as well, they’re great! 👏

Very interesting Old Rusty. I was intrigued by several of your techniques but when you attached the handles to the blade I was amazed to see you keep the integrity of the knife by not slathering everything in epoxy and clamping like so many artisans do. I liked the quality and craftmanship of measuring and counter-sinking the Chicago rivets. They look like they will last a life-time. I also noted a very handsome dog in one of your shots found elsewhere on your site. A dog guy is okay in my books! Kudos
