I believe that knife thought it had earned a vacation. It seems to have been sharpened so many times that the blade became considerably shorter than the tang! Good quality lasts for ages.

I've watched a few of these videos now. I know there's an issue with regard to carbon content in the steel. That not withstanding have you considered adding weld metal to remove the pitting?
Why go through all the effort of sand blasting & rust removal if you're simply gonna run it under the wire wheel anyway? You could have just done that at the beginning & saved a lot of time & trouble.
My opinion: This butcher knife is only good as a wall hanger. If you want to use it for food prep, you need to grind out ALL the pits. The blade is certainly thick enough to do that. It needs to be mirror smooth with no pits that can harbor food borne illnesses. Think E. coli & and salmonella, for example. Unless the cook is hyper vigilant about cleaning the blade after every use, you can almost guarantee illness.
It's official, it's impossible to handle a large knife without feigning a stabbing motion at least once! Nice work as always.

Nice work as always. I was a bit surprised that you did not glue the scales. But I guess the pins being fit/secured so well negated that.
Epoxying the scales isn’t just to adhere them to the tang, but also prevents moisture from getting in there and rusting the steel.
