    Today's recipe is part of my "off to college" series where I'm teaching my daughter some ways she can use her Instant Pot at college. This is called Lazy Day Chicken Casserole. It is chicken, stuffing and vegetables in a creamy sauce. An easy dump-and-go recipe for a "don't feel like cooking" day.

    That raw chicken was completely cooked through with only a one minute timer setting? I own three Instant Pots so I understand the way they operate but that still seems Iike too little time. I write this with an inquisitive smile. What am I missing? 😊

      Yes because it is on the bottom of the IP and closest to the heating element. The pot takes a while to come to pressure and the chicken is cooking the entire time.

      It was cut small and a chicken breast. All the time coming up to pressure cooks it too

    I have been making something very similar (2 chicken breasts and cream of mushroom instead) in my slow cooker.... game changer!! Way faster thank you so much!! I like this series because as a single person, you are showing smaller recipes and not ones for a family of 4+. I see another cookbook in the making, hint hint!!

      @@karenbellessapeterse Oh I wrote that wrong, game changer is in the instant pot! It takes way too long in the slow cooker. Your version makes it so much quicker to do, no 4 hours to wait which makes it a weekend meal only. :)

    I am waaaay older than a college student however I am currently living the single life, so these ideas are great adds to my instant pot choices. Been using an instant pot for 3 years now and still learning.

    Agree, wouldn’t eat chicken cooked for 1 minuet. Of course you could cook it 3 minutes and play it safe. The trade off is the stuffing and frozen vegetables would be mush.

    What a cool video! I think if i were to live in a dorm, I'd get a mini chest freezer and just stock it up with meals i cooked for myself in individual portions. There would be enough space for a roommate to do the same. In a 3.5 cubic foot freezer you could fit over one hundred single serving bowls.

    Hi Karen, if I was using a 6 quart instant pot and doubling the chicken and veggies, would the cook time need to increase? Looks great!

    I love stove top stuffing. Is there a way that this recipe can be made with the frozen chicken that you get from Costco? If so, would the cooking times change?

    How long do you natural release the instant pot?

      For this particular recipe you can release pressure immediately after the one minute is over

    I tried this recipe. I will not try it again. Description says creamy but it was not, it was quite dry so much it was very pasty. It was very salty also.
