LAY HO MA! This is a special episode not only because we're making the frothiest latté ever, but also because we're launching some new YMC merch! Join me in this episode and learn how to make a decadent almond cashew milk recipe right in the comfort of your own home.
ALMOND MILK INGREDIENTS:
6 cups filtered water
1 1/2 cups raw almonds
pinch of salt
CASHEW MILK INGREDIENTS:
1/4 cup raw cashews
2 cups filtered water
Directions:
1. Add the almond milk ingredients into the blender and blend on high for about 2-3min
2. Pour the almond milk into a nut milk bag and squeeze out the liquid into a large bowl (you can spread out the almond pulp onto a baking sheet and bake in the oven until dry - this makes almond meal and can be used in other recipes)
3. Rinse out the blender. Then, add the cashew milk ingredients and blend on high for about 45 seconds (soak the cashews overnight or boil them if you do not have a high powered blender)
4. Pour the cashew milk into the almond milk and stir to combine (passing the cashew milk through the milk bag is optional but not necessary)
5. Pour the milk into glass bottles, store them in the fridge, and enjoy for up to 4 days

Nice! I have a friend looking to purchase a home espresso/frother machine (don't really know what to call it). Do you recommend the brand you use and would you be willing to disclose the brand and style?
Lay ho lay ho! Very nice. But how do you consume that much nut milk in 3 days? I suppose making chai with it wouldn't work because as soon as you try to heat the nut milk it splits and adding cold milk to hot tea just doesn't cut it.

I often make hot cashew milk by blending 2-3 dates with cashews and hot water, comes out very thick & creamy, just right amount of sweetness, a delight on chilly nights ^^. Thanks Wil :)

I also add a few dates and a scoop of Carob powder- it just gives a bit of flavor

A little trick I learned from a raw food chef.. don’t add the full amount of water to the blender to start. You’ll get a creamier consistency faster with less water. Once it’s thoroughly blended add the rest of the water to the blender.

Good tip, but he has a powerful vitamix blender that would give it that extra creamy consistency. I know because I have a vitamix myself. This tip would be great for people with less poweful blenders though.
Gavin Anthony I have a vitamix also. It makes sense that the nuts are going to be pulverized more thoroughly and faster if they’re not swimming around in a ton of water. The raw food chef who shared that tip also has a vita mix. Less water is more efficient. You also don’t have to run the machine as long.

Thanks for sharing the tip. This will be especially helpful when making oat milk since over blending can make it slimy and I’m sure from this tip even better results with the other nuts.
Such a great reminder how easy making your own milk is! For those without a steamer/frother machine, I bought a stick frother at Ikea under $3 and it turns warm soy milk into froth heaven! ☕️

Excellent receipe! You should soak the almonds overnight and discard the water to remove the tanin and inherent anti-nutrients present.
What are “anti-nutrients?”
Those are not water soluble and discarded with almond meal. Anti-nutrients are not a problem for almond "milk", unless u are eating a lot of almond meal (or almonds and nuts)
I noticed Wil never soaks his raw cashews either...from what I've learned, soaking nuts (of any kind) helps remove phytic acid (what I think you're calling an "anti nutrient"), allowing us to get more nutrients and makes them easier to digest. Kind of like spinach--very quickly cooking it makes the nutrients more digestible, as opposed to being more roughage when raw (unsoftened).
Yeung, your spice closet blows me away. I make the same milk but I soak all the nuts overnight, even though I have a vitamix. I also add a couple of Brazil nuts for the selenium. I find the liquid drained from soaked nuts is a very grey, kinda dirty looking sludge, and I don’t want that in my milk. After I pass it through the nut bag, I put all the liquid back in the blender. I add 2-3 Majool dates, a cap of organic vanilla extract, about 1/2 tablespoon white raw honey, and a scoop of “Four Stigmatic” vanilla protein powder. Now this is a powerhouse nut milk. Try it.

Yes, I noticed that his cupboard is very neat and highly organized with bins labeled. Idk whether such uber organization is indicative of OCD which could be a blessing and/or a curse. Never have I personally seen items on kitchen shelves set up so detailed and visually aligned. I couldn't maintain that level of order on a daily basis.

Just a tip, I soak the almonds overnight and drain and pinch them to peal off the brown shells in the morning before blending with water. This not only makes beautifully pure white almond milk but it also makes the left over almond meal nice and white for baking purposes. Waste nothing! 👌. Also, if you like you can add a tsp of pure vanilla extract which adds a wonderful flavor to the milk. For sweetness without sugar, I also drop in one pitted medjool date! Yummy….

I add a pinch 🤏 of cinnamon, splash cinnamon and maple. Tasty milk.

Nothing against an occasional tasty cup of homemade nut milk, but it's way more caloric than homemade soy milk, which just naturally foams up well. Soy has been much undeservedly maligned. It is a huge collagen booster. Chinese have drank it for a millennia. I'm glad I rediscovered it and thrilled w the health benefits. Sometimes I combine cashew and soy to make a hybrid plant milk. 😄
Soy milk is my favorite. It froths so well. Westsoy has a shortage so making it would be nice. Where to get gmo free?
@@majo3423 Whole Foods use to sell it, not sure after the pandemic whether it’s been brought back. I get mine from Amazon. And sometimes my neighbor buys me Canadian organic soybeans from her co-op. I invested in a soy milk maker and it’s revolutionary. I always have soaked beans in ready in my fridge. When I need soy milk I have it freshly made in 25 minutes. Best zero waste investment as I’d normally go through 2-3 half gallons a week.
Fresh ORGANIC soy is the bees knees. It was the dairy and beef industry trying to give a bad reputaion with sponsored “studies” on totally processed garbage soy. Japan is known to have the longest life spans in the world and they eat fresh tofu, soy bean, soy milk all day every day. Soy is a gift.

I have been making almond milk at home in my Vitamix for a long time but I soak the almonds the night before. I never thought of mixing the cashew milk but I certainly will do now as I'm sure it will add some sweetness to the milk. I bought organic bags for the preparation and I basically use the milk for cooking oatmeal and for homemade oatmeal or almond flour pancakes. I'm in the process of preparing hot choco using almond milk which, again, I'll mix with the cashew. Great ideas, Will!
Thank you for this! I just got an espresso machine and have been frustrated with my almond milk & refuse to buy any “barista” brands with added ingredients. Today I made my own cashew milk and it made a huge difference in my milk steaming/frothing. Will have a better time practicing my cappuccino & latte art now that I can get a good froth

I just discovered your channel about a week ago and love it! For this nut milk I did drizzle a little coconut oil while blending to help with separation.
It would be great to see what nice recipes you come up with that use the left over almond meal! I used to make my own almond and soy milk until I got fed up with ¨having to use¨ the left over meal. You can only have so many stiff almond meal pancakes and so so soy meal patties before getting bored, right. I´m sure you can show us yummier recipes for them! 😎

Compost it. It is amazing for your soil. Plants need love too.
Make cashew milk instead and let the few solids settle to the bottom of your container. Use the milk until you get to the little bit of sediment at the bottom. No meal left to deal with.
I use soy pulp (okara) as substitute for oil / fat in baking cakes, cookies etc. I'm not sure how the protein is a sub for fat, but it has worked everytime for me.

Hurrah!!! I have been struggling trying to make a milk that will froth. Oat milk was an utter failure even after scouring the internet and doing all the tips and tricks. I just made my first batch of your almond-cashew milk and immediately went to the frother to try it out. AMAZING!!!! Its nice to know my procedure for last many years is almost same as the expert here! Raw organic almonds I buy 25# at a time from a farm direct & I store them in freezer. As they are pricey, I use 1/2 cup soaked drained almonds to 5-6 cups filtered water. It is still very rich, frothy & delicious. It makes enough for me to use 2 days. Hope its ok for me to offer this. LOVE YOUR CHANNEL!!

Since I went vegan I haven't found any planta based milk that could go this foamy and the BEST thing of all is that I'm trying my best at zero wasting and if this works, Will save like 4 bricks a week!
I lightly toast my almonds, or any nut because it helps the nuts release their oils, before making nut butter, then make my milk from the nut butter. Cashews do not need to be toasted (or soaked if you have a powerful enough blender), but I do toast them lightly because it adds sweetness and depth to the taste of the milk. No need to strain any milk made from nut butter. I use 1 tbsp nut butter to 1 cup of water. You can play with this ratio for a creamier texture. It is also very easy to scale this recipe. The benefit of this is that nut butters last longer in the fridge than nut milk. I usually have several nut butters in the fridge at a time (e.g., almond, cashew, hazelnut, macadamia, peanut, walnut etc.) and make whichever milk suits my immediate need. I too have the vitamix, so I am not sure how this would work with a less powerful blender. The nut butter does need to be very smooth to use it this way, so I usually do two cycles of the spread setting on my Vitamix.

For the pulp I found it to be easiest to just spread it out on a piece of parchment paper and let it dry at room temperature. Very convenient! I use the dried pulp for muesli or granola. (It's almost tasteless since all the goodness is in the nutmilk, so just use a little bit)

You should soak the almonds overnight to get rid of the phytic acid which locks in its nutrients. The nut has this in order to prevent it from being digested when swallowed by animals. But in this case we want it to digest.
I've been making almond milk at home for a long time using my Vitamix but I never thought of adding cashew milk. I'm sure it will add sweetness to the finished product. I soak the almonds the night before and use the milk primarily for cooking my oatmeal and my almond flour or oatmeal flour (homemade) pancakes. I'm in the process of making hot choco using almond milk which going forward I'll add cashew milk. I use organic bags for the milk preparation also. Thanks so much for the tips, Will!

If you don’t have a steamer. Silk works the best for in store brands. I heat it up on a pot and use a small whisk. I whisk the hell out of it while it’s heating up and get awesome results.

Will def try adding my cashew cream/milk to other nut milks to see if it froths up well in the frother my hubby bought me for me bday. I’ve been buying barista oat milk which froths well but it contains some additives such as oils. Less ingredients is always better. I don’t drink coffee but love hot chocolate. Lindt Madasgascar is vegan. I simply melt it into the nut milk. Mmm!

Yum! I don't have a fancy blender, so I pressure cook my nuts in the instant pot. Add nuts and 1 cup of water, 4 minutes on high, natural release. Done!
