  • One of the hottest curries available, even hotter than the vindaloo, Phall is a British curry which originated in the Bangladeshi-owned curry-houses of Birmingham. It is often made with fiery habanero peppers or scotch bonnet peppers which are incredibly hot for most people

    HEAT ##
    This is a really hot curry but if you want to make it milder to still enjoy the flavours simply reduce the chilli powder to 1-2 teaspoons (rather than 2 tablespoons) and add 1 level teaspoon of Mr Naga pickle.
    Ingredients ##
    4-5 tablespoons of vegetable oil or ghee
    1/2 teaspoon of fennel seeds
    1 medium onion (around 150g, finely chopped)
    1 tablespoon of garlic and ginger paste
    2 tablespoon of tomato paste (mixed with 6 tablespoons of water)
    1 teaspoon of mix powder or curry powder
    1/2 teaspoon of salt
    2 tablespoon of hot chilli powder
    2 teaspoon of chilli flakes
    1/2 teaspoon of fenugreek
    1/4 teaspoon of garam masala
    1 teaspoon of sugar
    1 teaspoon of lemon juice
    handful of fresh chopped coriander
    250ml heated up curry base gravy
    10 bits of meat, veg, paneer or tofu
    2 teaspoons of Mr Naga (hot chilli paste)
    4 green chillies (sliced)
    Method ##
    1. heat a pan on medium and add the vegetable oil or ghee. Add the fennel and allow to fry until it starts to sizzle
    2. add the onion and continue to fry for a couple of minutes until the bitter smell disappears and it begins to caramelise
    3. add the garlic and ginger paste, stir through and fry for around a minute
    4. turn up the heat to max and add the tomato puree, mix powder, salt, hot chilli powder, chilli flakes and dry methi leaves, stir through thoroughly and allow to cook out for a couple of minutes. If you curries ever taste grainy it’s because you’re not cooking the spices enough at this stage
    5. add in half of the heated base gravy, stir through and allow to reduce for a couple of minutes before adding the remaining base
    6. after a further couple of minutes reduce the heat slightly as it tends to spit a lot at this stage, add the garam masala, sugar, squeeze of lemon and fresh chopped coriander and stir through well
    7. add your choice of protein and coat to stop it from drying out and add in the Mr Naga pickle and fresh sliced chillies as well
    8. allow to simmer until the oils separate, the meat is cooked through and the sauce is the consistency you require

    Just found your channel dude, i cant seem to find anywhere local to try out the Phaal, ive been building up my chilli tolerance for some time, now i dont even feel heat from a Vindaloo, this is perfect, will follow your receipe, dropped you a sub too, keep up the great work!

    I made this along with the curry base over the weekend and it was amazing. Spicy! Very tasty (well at first anyways, could not taste much by the end but that is what you expect out of a Phaal or Vindaloo). Thank you for these videos and recipes and keep up the great work.

    Serious spiciness going on there with the Naga. This is way above the original 90's Phaal we were eating back then. Great recipe this but, from what I remember the main heat we got was from liquidised Scotch Bonnet chilli paste and bullet Chillis. The equally brutal Thai Jungle Curry was a challenge also, using liquidised Thai Red Chillies (Prik Kee Noo). Seems things have moved up but I reckon Scotch Bonnet is about as high as it gets - Scoville rating wise, without the pain or as you rightly mention the toilet.................;)

Just dried out some Naga Morich so might add half..............keep up the videos.....................

    Hi there, another great video. I have been looking for a Good Phaal recipe and this looks like it. 1 question that you could please answer for me, I do not like the taste of naga chillies, is there something else that I could use that would result in the same heat without the taste?

      You can buy pkts of cubed frozen chopped green finger chillies, along with garlic and ginger in Morrisons.
      They are all spot on, and the chilli would be perfect for you.

      Hi, annoyingly it's down to the brand of powder you are using I'm afraid as I have a catering tub of normal powder which is about 4 times hotter than my store brought extra hot one :( Which brand are you using as I've asked Rajah this to see what they say and I'll advise. I would estimate 1/2 extra hot compared to normal hot but that's just a guess and where I would start with a dish

      @@TheCurryKid It is the rajah brand that I have a good sized bag of the stuff. Extra Hot Chilli powder. Was just wondering if you knew how it compared to the hot chilli and just the standard chilli. My family say I make my curries too hot but they seem fine to me lol

      Hi, I would add a Scotch bonnet. You’re not going to get all the extra flavours that are in Mr Naga but you’ll get the heat 🌶🌶🌶

    does blending the onion give a better curry ? never tried it

      Personally I think not. I like to have control over how much I caramelise the onions and you cant do that if they are just mush. It's 100% fine for things like Korma and Tikka Masala which taste strange with caramelised onions but for anything spicy I would stick to fine diced or sliced. I'll remove that bit from the recipe :)

      I have this for tea tonight heated up, didn't dare have it on a school night. I have them fairly hot although mine has 2 teaspoons of chilli rather than 2 tablespoons and only 1 level spoon of Mr Naga rather than 2 heaped.
      All the testers had theirs last night and I got great reviews which was fantastic. Enjoy :)

      Don't get too hooked up on the quantities of veg restaurants don't and I've just made more last night, kept to the spice quantities but chucked in 5 large onions, a potato, a whole carrot etc and it never tastes any different :)

    My First Suggestion for you to cook is Chilli Paneer from Indo Chinese Cuisine and Chicken Ceylon from Sri Lankan Cuisine

      The Curry Kid lol not that one Chilli paneer from Indo Chinese cuisine. If you prefer you can do Chicken Manchurian or Fish Manchurian also from Indo Chinese cuisine or Masala Mogo.

    took on two phaal's in my time... one a few years back , one last night ,,, heavy work , one few years back....had tears down my face :) , not took keen on the spicy food , but like the challenge , my dog loves some phaal , eats it like nothing lol

      I get what you are saying but you're not going to get that from most takeaway or British Indian restaurants. More chilli powder and a few spoons of Naga most likely. I'm planning a better one of these anyway, I was only 14 when I made this one so I've progressed a little since then :)

      lol, mine went in last week to deep freeze. The lads that test mine all had today off so they waited until last night to eat theirs and report back :)
