I would have done this for him in a heartbeat! There's only one curry house I know that does this dish amazingly and unfortunately it's my old hometown so I only ever get to order it when I'm visiting my mother. We all know how great Al is at his curries, so I would LOVE to try his version of this!

Thank you, Al’s kitchen, for helping me sort out my deep pan order from Baa’s House. I adapted your recipe and used it to make a ‘Carolina, Chili, Chicken, Tikka, Naga, Phall.’ I substituted the tomato puree with Carolina Reaper tomato paste and also added chopped finger chilies as a garnish, just for a little extra kick! I then tested the recipe on several family members who I haven’t seen or heard from since. On the plus side, I did get to make full use of my new set of rods for the drains! All credit and responsibility went to, Al, of course. ;-)
Al, just made this exactly to your recipe and it is wonderful. The heat builds and then reaches a crescendo and just fades away. No drink needed to calm things and leaves a wonderful taste 😌 in your mouth 😋. Won't be the last time I make this. Thanks Al.

I made the Pathia last night with a fresh Naga chilli and two table spoons of extra hot curry powder. Couldn’t stop coughing while I was cooking it my wife was going nutts 🤣! I'm an expat Brit in Florida and my local Indian restaurant is the only one I have ever seen in the USA that serves phal. I also make my own with fresh Carolina Reaper and I often eat 6 million Scovilles via a hot sauce called "The End", sold in a local hot sauce store. Bring your missus over sometime Al. The fridge is full of beer and it's all about BIR curry at my place.
YES! A proper curry. I just made a new base gravy last weekend. This is next for me, I love a hot curry. It's a bit of a shock that Al can't handle his!!

Have now made this dish twice, the first time didn't have naga pickle so used a half a dried naga chopped up and the curry was really good lots of heat and nice flavor. Made it again last night using mr naga and also chucked in the other half of the dried naga. My Wife had a phall from our usual take out so we were able to do a real taste comparison. The take out was hot but had a bitter flavor where as Al's was hot but had a much richer flavor. An excellent curry which will now be a regular on our home menu (but I really suffered this morning!!) Made this with some Costco large prawns and it was the best homemade curry I've ever tasted. As good as my local takeaway, thanks AL, now curry is an option not just once a week😀

Hottest thing I've ever tasted was the Phal from the Kismot restuarant in Edinburgh. When the waiter delivers the curry to the table he wears a gas mask and they play the theme tune from Jaws!

It packed a punch thats for sure and I was sat watching TV having a beer with the dish on one of those wooden Dinner trays. So anyway I was kinda drunk and spilled some food on the tray and I just stuck it in the kitchen an address it in morning as u do. Anyway the spilled food had left a total stain on the varnish tray, so im like thinking if its doing that , then what is it doing to my insides hahahahahaha.
Rupalis restaurant on the toons big market was in the Guinness book of records for having the world's hottest curry. I tried it once and it was like being pepper sprayed and stabbed in the stomach. No amount of beer got rid of the burning. Never ate a hot curry since.
My legend was a simple lamb vindaloo that I followed a RUclips recipie for (well... almost). The guy on the video threw in an extra 3 birdeyes towards the end. I didn't have any birdeyes, I only had reapers. One small reaper went in first, and I knew that was gonna be hot. But my friend and I somehow convinced each other to add a second, which was twice the size of the first midget. Half way through eating it I felt like I was tripping. Couldn't finish it. Never again!
I had a Phall when I was 18. Even the waiter tried to talk me out of it but I was too stubborn to listen. I ate the whole thing, but was still feeling the effects a week later. Proud to say I've eaten one, but wont do it again :)

Al, great stuff as always... you asked what we've been making... I've recently got into Sri Lankan curries, especially unusual recipes , uru mas, or padre is a favourite, using red wine vinegar to marianade pork, flavoured with lots of aromatics toasted whole spices, lots of cinnamon and black pepper, def worth a whirl! I'd probably stick some green finger chillies in that naga phal too... ;)

From the little I understand, phal is purely a challenge level. It's the 'How insane can you go?' Menu item. Like, if you order it, you're there to be hurt. The mastery is in making it and keeping both flavour and style - any fool can make something literally lethal hot, the trick is maintaining an actual food item alongside the heat.
Really nice to know how to make phall as I order it extra hot from my restaurant all the time. Al a slice of lemon also goes well in a cold wheat beer!

Naga does impart a beautiful, earthy flavour along with the heat...Top tip. Have a glass of Lassi on standby. Easy to make and does the job better than milk. Cheers, Al.
Hi Al, maybe I won't go for the phal - prefer flavour over heat to be honest. Anyhoo....... Tried out your Patia recipe on Saturday night................absolutely amazing - balanced flavour and heat combo was immense. Whole family loved it. Didn't risk making my own nan bread so got 4 from local restaurant. Made pilau special rice as well - fab. Finally tried out a new keg for my Perfect Draught - German one from Munich - Spaten - big thumbs up and we all agreed is a great,rounded lager to have with curries.. Keep up the great work mate.
Hi Al, Just watched your video on the Phall curry. My mouth was watering at the site of it. I regularly eat Phall curries and have done so for over 40 years, Ive even complained in restaurants when they weren't hot enough. If I can't find the ingredients when I make my own at home, I usually start with a vindaloo and beef it up a bit with some hot sauce which must be at least 2.2million on the scoville level. All the best.

Copied the exact recipe and technique, it was very, very aromatic and tasty, will definitely try more of Al's recipes.
