Good, concise review there - I think the model you had here was the 'SE', one trim below the 'EX' which is top spec. The auto gearbox in the Jazz is a CVT, which means its '7-speed' mode and paddles are really just the gearbox simulating gear changes, presumably to make people new to a CVT feel more like they're driving a conventional auto.
Good honest review, the headrests are fully adjustable, you just have to press the button on the side of the headrest then you can adjust them any way you want. I agree about the plastic steering wheel, you get a much nicer leather steering wheel on the EX trim level models.
