Less hands•on = After preparing eggplant by cleaning, no need to peel -- simmer in marinara sauce in large pieces or leave it whole. It will soften while cooking; check on it often. You don't want it to dissolve by overcooking. Delicious on top of pasta or set aside for a snack w/ your favorite crusty bread; as a side dish; lunch sandwich. If your diners enjoy garlic -- cut slits into eggplant before immersing in sauce & place a garlic clove in each. 🇮🇹 🇺🇸
