@ewalker1057 Not everyone likes turkey. Thing you have to watch is the turkey drying out and ruining the meatloaf. Every turkey loaf I've done has been fine. My preference is a mexican-style turkey with a roasted jalapeño gravy. Again, not for everyone. Blending a little dark meat and white could be done probably better than everyday grind packs. Straight beef or chicken are a little boring.
I really like the texture of this meatloaf. Not so crumbly and falling apart. Yet, it looks flavorful and moist. The mushroom sauce is next level.

Tip: An alternative to using eggs for the meatloaf is: the juice from a can of chickpeas or beans. Another substitute for bread is ground flax seed. 😊

Never tried turkey meatloaf. Will try this. Also the mushroom sauce can be used on other meats?
I suppose a standard pork/beef blend would be fine. Personally, I'd try it with a venison meatloaf.
