I’ve search our grocery stores here for lamb but they just don’t have it. If they have some, it’s like $15 a pound. I’m hoping to find it in the spring. My Mom made this recipe with cubed pork roast. Love potatoes and peppers. She would take leftovers and make a frittata with it for a quick Saturday night supper with crusty Italian bread and a salad. You always bring me memories of cooking with my Mom. Grazie!

What cut of the lamb she used?
Probably a boneless leg or boneless shoulder. She always uses one or the other for lamb stews.

Where do,you find the thicker pancetta? All I can find is the very thinly sliced packaged ones.
