Let me explain the story behind "ras el hanout", It literally translates from Tunisian as "head of the store", Hanout is the store where we buy spices, and that head expression means that we got a bit of every spice, like we just mixed all what's in the store to make one spice. It has : cinnamon, black pepper, cumin, tabil, hot paprika, caraway and turmeric.
Shoulder of lamb is not often sold these days in supermarkets in NZ, so has to be purchased from a butcher. Looking at 30 to 40 dollars. Lamb has outpriced itself here for the average family, but was the mainstay of my childhood.
Surprised. I grew up in the UK on Aussie or NZ lamb. Here in Canada Ontario lamb has no taste but I can get Aussie or NZ lamb (frozen) which I buy when on sale as it’s quite expensive
@jerryoshea3116 shoulder lamb is mostly sold as chops, unless specifically asked for as shoulder roast, and even cuts such as neck chops and leg shanks are expensive. It is available, but a good roast is beyond the purse of the average family, at least on a regular basis.
@jeanrichardson2044 Wow,that's seems incomprehensible..I know it's one of ( or the)their largest exports,but u would think they could supply the locals Supermarkets and Butchers more cheaply.. But I have family in Whangarei, Auckland? ( My Aunt moved from Canada ,via Eng& Ireland many Moons ago) and she loved the country but neglected to mention this issue
This looks amazing! Two questions and there any other meats you could use in the first recipe? Second my husband has an awful reaction to garlic, what else could we use?
It sounds as though he may have a sensitivity to the allium family. Does he tolerate onions, spring onions, leeks, chives? I can use the processed garlic in tube,or jar but not fresh, or garlic chives which make me really unwell. I also avoid spring onions. In most cases I will just omit the garlic.
I cannot find pearl barley anywhere near me in Northumberland. Ive seen broth mix with it in, but I want the pearl barley by itself. Do you know if there is a shortage or what is going on?!
People just can't afford these all-day cooking methods - imagine the fuel costs of running the oven for 6-hrs+. Don't have a butcher to find specialist cuts of meat (bone-in shin). All great with the 1st chicken dish, but who's got time for the sticky, burnt-on clean-up afterwards?
Agreed, and ingredients like preserved lemons and lamb are stupid money now, even tomatoes are becoming an ingredient that used to be affordable, not anymore
How does a chef lie like this? 6 hours is quick? Easy on what exactly the utility bill?. And do you even know why chickpeas are soaked overnight? Not doing so could actually genuinely make one unwell, with a digestion issue causing gas, bloating, flatulence, acidity, worsen existing GI tract conditions. Also I am pretty sure u know it has to paired with certain herbs to offset some of these effects…..just plain ill informed, misguided and Ridiculous……stopped at the first recipe itself.
Think it’s about quick prep then let it all cook while you go off and do other stuff. Like using a slow cooker. Chick peas could be the canned ones if you are nervous around soaking the dried ones. Looks like this meal option is a bit of an upfront ‘set and forget’ one. Also, yes, electricity prices have been ramped up recently - but low and slow is still pretty cost effective. Just saying.

I have done the lamb shoulder ,chick pea recipe but rather than using the oven am using the slow cooker-it's making the house smell lush!!!
