    Yum! I love that you juiced the orange that way. My European Grandma didn't have juicers and peelers. She had great knife skills, and I learned ways to peel and cut vegetables that make some of my friends nervous (I won't go into detail... but if you know, you know 😊) Thx for another great recipe!     Nice vid. Will try this. When grating carrots etc don't cut off the tops, u can hold that to grate the carrot so u get more carrot without grating ur fingers!

    This is excellent & saves well for a few days. My husband makes it for us using our food processor (shredding blade) it comes together quick & easy! I'm on a strict diet for my heart with very limited oil so we omit the olive oil. It's still delish!

    The olive oil is the basis of the vinaigrette but if you are avoiding oils you might try taking a 1/4 to 1/2 an avocado and putting it in the blender with the vinegar, orange and lemon juice, garlic, salt and pepper. Blending it until smooth, then adding it to the salad. If you con't like avocados, another thing might be adding a little apple cider vinegar, maybe a tablespoon or so with the ingredients.

      p.s. I just saw that you have several good recipe tips in your top pinned post above. You might consider adding the "plain canned beets" tip there, too, instead of on the video itself. I imagine it would be easier to edit the pinned post than to edit the video. ;)

    hi KDC, finally i found a channel knowing or how grate and simple to make a veggie salad....tbh, i love veggie salad, im making a grated carrots, beets(steamed & sliced) and cucumber with an ACV pinch of salt (never tried to put any kind of onion) way back when i was working in Qatar....but when i got home in my mother land or with my hubby & children my routine of eating or making of it made me changed or out of the way (u know when peeps is not used to eat veggie salad) i can't do anything but to get away from our daily food😢😢
    i have been looking for this kind of channel, now that i found yours i will definitely include again my all time fave salad in my food & make some of your recipe, nevertheless i subscribed....

    Hi. I love how colorful the salad is and clean tasting in terms of palate taste. Thanks for sharing a simple healthy salad alternative. One question though. I was wondering how long should the vinaigrette sit before you add the grated beets, apples and carrots?

      Thank you Jemima Mwafuga! As long as you mix the ingredients in the vinaigrette well, you should be able to add everything else right away.

    Thank you very much for this recipe. I tried it today at it was wonderful. I used two lemons and one orange and it was good. Next time will use two oranges and one lemon for a sweeter taste. I used to hate beets until today. Thanks again.

    I am very careful when grating the carrots. Also when peeling the beets or lemons, I cover my hand with a towel in case the peeler slips. Saves me a lot of cuts on my fingers. I am going to make this salad. Looks great.

      I have to say you were not wrong, I tasted a little last night, and brought the rest to have on crusty "almost stale" bread, one of the tastiest lunches I have had in a long while. I threw a handful of fresh corriander leaves into it before I ate and that was a very complimentary flavour with it. Thanks again.

      Thanks for complement! They must have developed over years of chopping :) I think this knife was a present from a neighbor. There is no specific brand markings on it. It's a standard Santoku knife, nothing special. I use 3 or 4 knifes all the time and that's about it. This one, a standard chefs knife, a 35 year old paring knife my Mom and Dad used and a bread knife.

      Gonna admit, while I still use the old standard 99 cent peeler, I like this one alot. There is no company label listed, just a big M on the handle. Got it a few years ago, not sure where as I'm always buying kitchen gadgets.

      Great question. Since this is a salad I usually make in thr summer we tend to have something grilled with it. Grilled pork chops or piece of fish.

      Oompa Loompa - We use the carrot juice for the little bit of sweetness and the fresh citrus lift. You can try carrot juice but not sure it would be the same, maybe if you added carrot juice and a little more lemon or other citrus if you have it.

      I think you will be surprised, really not any garlic taste. Adds a little component to the "vinaigrette" but with the orange and lemon juices, and the acid from those, it blends in nicely! Thanks for the comment!

      Judy Hogan - Not silly at all, great question. Yes, I use uncooked beets, easier to handle and uncooked they add more crunch to the salad. If you have cooked beets and want to try it, let me know how it goes. Think you would still get some crunch from the Apples and Carrots. 🙂

    Sorry, silly question coming up... Doesn't the grated Apple oxidise?!

      Never any silly questions. Possibly the acid from the orange juice works on the apple 🍎. If there is any browning ar all, the juice from the beets turns everything red ( including your fingers) so you wouldn't see it.

    Thanks so much!! This is amazing and hopefully helpful to detox a fatty liver. I added a whisper of cinnamon and some chopped pecans. Reminds me of the holidays’ cranberry relish a bit. I guess that’s why the pecans came to mind:) Nice to have some healthy sides in the fridge.

      There are cases to be made on both sides for combining or not combining certain foods. In addition to the foods in the salad there are fats and acids and this is meant as a side dish, not a main course so there are copious amounts being eaten. Not received any reports of this causing issues, but each person is different so try it and find out.

      Temptations Matenga - Yes! Would add an interesting twist. Just make sure coconut oil is melted and not solid at room temperature. I love coconut oil and use it every day.

      if I peel an apple, then not.

      Yes Connie, if you slice it thin or shred like I did in the video it is very crunchy and the beet retains more of its sweet flavor than when you cook it..

    Since the beet turns everything red, why care about the color of the carrots?

      Great question and good observation Bud. If you have just regular orange carrots, use those. I just happened to have the multi color carrots and used them for the recipes. Even though the beet does turn them all read, if you look, because there are some of the white carrots in there the are more a light red and pink which gives a little difference visually.
