    Becky really shines in this type of video. I usually don't like her very much in Cook's Country, but maybe it's because of the format. She is really nice, and I hope to see more of her

    Served this roasted beet and carrot salad for Christmas lunch and it was a perfect complement to the rich buttery dishes I made. Not oily or overpowering, just the clean taste of the roasted vegetables (beets and carrots are a great pairing!) with just enough char to make them sweet and smoky. The dressing is light and also helps present the vegetables perfectly. I was skeptical about the watercress but it was another perfect addition (Great job Becky!) that added color contrast and raw freshness. The video and the directions have conflicting sizes for cutting the carrots, I would just make them the same thickness as the beets the next time, if the carrots are thin some will inevitably burn and stick to the pan since this is not an overly oily dish (which is the whole point!) Highly recommended and will definitely make again.

    I’m going to try the salad tomorrow can’t wait. The only thing I will omit will be the sugar I’ll use maple syrup instead. Thanks for sharing

    This looks amazing... can't wait to make this. I'm betting crumbled goat cheese or feta cheese would take this over the top!

    This looks beautiful, and also so full of nutrients that are good for circulation and VO2 Max. For the meal suggestion, I get it would be great with microwaved chickpeas stirred into the dressing with the veg, instead of cheese.

    use chilled sliced beets and bosc pears to build a layered stack and then use blue-cheese (preferably Maytag) crumbles on the side and serve on a small bed of mixed greens

    I use this recipe just to make the roasted beets as a vegetable dish. Works great and haven't tried the salad yt

    If you don't think you like beets and haven't had them since you made that decision give them a try again with this recipe. You might find your pallete has changed. This could be true for many things you abandoned when you were younger.

      I totally agree. I only had canned beets as a child and I despised them. Fresh beets are completely different. If a someone is still a bit hesitant, try pickled beets. They are delicious.

    You heated up your pan on the 'lower' rack at 500°. Is this celsius, or fahrenheit? Then you put the veggies into the oven on the 'upper' rack, but there's no mention as to whether or not it's still at 500°. Seems kind of high if fahrenheit, and low if it's Celsius. Hate these kinds of videos where you try to find the answer in the comments section and see that you've ignored others with the same question.
    I roasted for 20 min at 425° C, took out and flipped and roasted for an extra 10 min. I will say that we all really enjoyed it. The dressing was very nice.

      If you can find orange beets, they are milder.

      That is parchment paper. Won’t burn and saves your baking sheet from being destroyed.

    What's the difference in taste between canned "pickled" beets and fresh beets? Do different coloured beets have different flavours? I got incredibly sick as a youngster eating canned beets. No one else in my family was sick from eating them. Ever since I've believed that I'm allergic to them.
    Btw, searched the channel for "flour mills" and it seems as if ATK has never tested them or compared them. So, here's a question do stone flour mills make whole grain flour "gritty" and if so why?

    When dicing an onion you don't need to make the horizontal cut, because the onion has separate layers, just vertical slices

    I'm sure this is a great recipe and everything, but once I realized it was "roasted BEET" and not "roasted BEEF" it kinda took the wind out of my sails.

    Never cut or peel the beets before cooking and leave some of the stem on or you’ll have a big bloody mess. Peel and cut after cooked.
