The ferrulic acid thing is fascinating. I'd never quite articulated the connection between lotus root and beets before! Also it's hilariously better known as a skincare ingredient.

I see some saying they tuned out at the word cilantro. You can leave that out, or substitute parsley. I personally love cilantro, but can't always get somewhere to buy it. I was at an Aldi's yesterday and got two packages. They come wrapped in a sealed bag for 79 cents, unlike Walmart where they are just thrown in a pile in the bin for 88 cents. I forgot to look for beets, maybe next month, though I always keep canned beets on the shelf. Love them.

Dan, I would watch you do anything. I love beets, so today's recipe will be one that I will definitely make. I'm wondering why you don't steam it on the stove (as I do most all of my vegetables). It's really quick especially if they're cut up and they don't touch the water.
Because it's NOT really quick on the stove at all. It's a fact of physics that things will cook faster in the microwave. And unlike a stove, the microwave doesn't also need several minutes to heat up. In other words, why aren't you doing them in the microwave, and saving a bunch of time AND money?
I set the microwave for 25 minutes. After 21 minutes, I was notified by my smoke alarm that the beets are done...waaaaaaay overdone. Just curious, is your oven an Easy-Bake by Hasbro? That cooking bulb inside may need replacement. The beets do however make nice decorative pebbles in my wife's garden.
I was really looking forward to the salad I made last night, but either the produce was not up to par or I was not satisfied with the result. It had a strong acidity that I had to balance out with some Balsamic, but even then, it didn't quite hit the mark for me. I guess I just prefer Thai salads more.
Love all the ingredients, not a fan of the layered presentation. If I were to make the salad I would toss (with less water in the yogurt to better cling or adhere to the beets?) just before serving. If served to me layered I think I might be somewhat disappointed and immediately start tossing at the table. As someone who used to make Caesar salad tableside, that final presentation is everything, particularly if you agree with 'we eat with our eyes' first. Unfortunately, I'm a beet hater, they taste like dirt to ME. My final step in this recipe would be to use a large ATK approved silicone spatula and scrap it all into the trash can. But that's just ME, can't abide cilantro either, that tastes like soap.

I cook them in the oven for about 30 minutes at 400° and always get great beats. Not sure why I keep seeing how hard beets are to cook.

Always use full-fat stuff, low fat means no taste.
