Hi Beth. I know the most important rule for backing yeast dough is to let it rise right before the oven to insure the fluffy breads. When you transfer the dough into the Dutch oven, would it get flat? May be I'm missing something. The other bread recipe you have, you let the dough rise on the backing sheet before putting it in the oven.

The flavor was spot on and the inside of the bread was so soft and moist! I definitely want to make it again but found that 500F for 30 min burned the bottom of the bread and the top was pretty brown, and the raisins that were exposed got burnt to the point of bitter. What do you suggest to prevent the outside from burning? *I did use a dutch oven and preheated it in the oven as directed
Ahh OK, I would then turn the oven down to 450F and try that. You may need to bake it a few minutes longer, but that should help prevent the burning :) I'm so glad that the inside was yummy! :)

I have never made bread before, but I'm going to try this tomorrow. If I were to leave out the cinnamon, raisins, and walnuts, would it be like a regular wheat bread? How long will it be good for? Will it freeze well?
Correct it would be a great WH Bread that way :) And yes it freezes beautifully too! Either keep it in a ziplock bag at room temp or in the fridge for 3-4 days or slice and place in ziplock bag and freeze. It will remain great for at least a month. Toast when needed or pop in the microwave :) Enjoy!

I haven't tried it with this recipe, but when I make raisin bread I plump them in boiling water and then let it come to room temperature and use the liquid in the dough. It adds a nice flavor and keeps the raisins from burning so much when they're on surface of the loaf.

What type of salt do you use? The amount you mention, can't remember exactly how much, sounds like a lot if it's in table salt (which is all I've got). This looks delicious. Thanks for sharing. X
Great question I wouldn't use table salt for cooking and baking. That's best for seasoning at the table :) Best bet is a coarser salt like Kosher Salt. That's what I used here. Here's my favorite brand: amzn.to/2j5nbrk Enjoy!
Just til it doubles in size. If it's in a warm place, this could be 6-8 hours. If it's cooler in your house, or winter, it may be more like 10-12 hours.
I would start by using the same amount and then if it's too dry add more water in 1/4 cup increments until it reaches the same consistency you see in mine :) Hope you enjoy!

You can leave them out, no problem. :) I often use pumpkin seeds (the small green ones) in place of nuts if I want that flavor or crunch.

If the lid is meant to go with the skillet then yes. I have seen people do this in the Lodge Cast Iron Casseroles with lids and looks great :)
