- Cucumber Raita Recipe - Mustardy Cucumber With Spiced Dressing - Spicy Cucumber in Sour Cream

Ingredients - each recipe serves 3 to 4
Spicy Mustardy Cucumber
1/2 pound cucumber with seeds discarded
1 teaspoon roasted and ground cumin
1 tablespoon toasted sesame seeds ground to a powder
2 heaped tablespoons thick yogurt/Greek yogurt
1 tsp Dijon mustard or mustard sauce of your choice
green/red chilli as desired
freshly ground black pepper
1/2 tsp salt or as per taste
1/2 tsp sugar (optional)
2 tsp oil
1/4th tsp panch phoron

1/8th tsp turmeric powder
1/8th tsp chilli powder (optional)
few drops of fresh lemon juice
chopped coriander leaves
chopped mint leaves
Spicy Cucumber In Sour Cream -
1/2 pound cucumber deseeded
half of a small onion sliced or diced finely
fresh red/green chillies chopped (optional)
freshly ground black pepper
1/2 to 1 tsp chilli oil (optional)
few drops or lime/lemon juice (optional)
2 heaped tablespoons sour cream/coconut milk
1/2 tsp salt
Cucumber Tomato Raita -
1/2 pound cucumber deseeded
1 small tomato deseeded (optional)
1/3 rd cup thick plain yogurt/Greek yogurt
1/2 tsp roasted and ground cumin + a pinch for sprinkling on top
1/2 tsp chaat masala
1/4th tsp salt or as per taste
freshly ground black pepper (optional)
chopped coriander leaves
chopped mint
** You can use coriander or mint leaves or a combination of both. You can also use your preferred choice of herbs
** keep it refrigerated and take it out 15 mins before serving
** Serve it as a side along with rice/roti/paratha/naan/any pulao/biryani

I'm a beginner in cooking, So I search various channels to follow their recipes. As a Bengali, indian, and bengal cuisine was my first priority but there was some catch, every channel was giving me the recipe, not knowledge. I need the knowledge more than the recipe. Then I found this channel randomly. And I found myself blessed. That is so wonderful. Nothing like freshly grown cucumbers. Last year I grew cucumber in containers but it was infested with bugs. What do you do to keep the bugs away.
@@CurriesWithBumbi I use an organic spray called BT. It does a good job but you have to spray early in the morning because using it in direct sunlight will cause the leaves to burn. Neem oil spray is also really good!
@MaryinWilm I started using Neem oil spray as soon as I spotted some aphids early in the season for tomatoes and that really helped. Neem oil didn’t help me with the cucumber bug infestation last year. Have to try BT next time. Thanks so much.

Thank you Bumbi! I love cucumbers, they are so refreshing. I think I'm using my pestle in the wrong way! I usually pound it on the mortar but you seem to be doing more of a gentle circular motion. I learn from you all the time 😅
I pound it when grinding ginger or garlic. When it comes to spices or seeds I do it in this way. Cinnamon, cardamom, nutmeg on the other hand requires an initial whacking followed by the circular grinding 😀

Raitas go very well with dry preparations like tandoori chicken, Nan, roti, kulcha etc. Now as it's summer its very enjoyable.

You can make raita with only yogurt. Follow the first and last recipe without the cucumbers but use more yogurt instead. I sometimes make it without cucumbers as well, sometimes with little tomato (deseeded) and onions as well.
Also Bumbi at Raj party, the men sat together and ladies did same!!! Found us strange we sit together 😂

What can be substituted for cumin? It does not agree with me.
You can use little bit of curry powder or just leave it out
