Tofu Soba
(22.5g protein, 6.4g fiber)
- Main ingredients: 4oz soba noodles, 8oz silken tofu, 1/4c peas or edamame, 1/2 grated carrot, 1/4 cucumber
- Sauce: 1 garlic clove, 1/8c soy sauce, 1/8c sesame oil
- Garnish: Calamansi (or lime or lemon), sesame seeds
Tuna Melt Pita
(38.7g protein, 5.2g fiber)
- Tuna mixture: 1 can of tuna (drained), 1/8c basil (chopped), 1/8c corn, 1/8c Greek yogurt, salt, pepper, lemon
- Assemble with: 1 large whole wheat pita, 1/4c grated cheddar cheese, tomato slices
Deconstructed Taco Salad
(24.9g protein, 16.8g fiber)
- Main ingredients: Tortilla chips, 1c lettuce (chopped), 1/4c cherry tomatoes (halved), 1 can of beans (drained and rinsed), 1/2c corn, olive oil, taco seasoning
- Dressing: 1/4c Greek yogurt, 2 tsp taco seasoning, 1 tsp honey, squeeze of lemon (optional: hot sauce)
