Think a more fair comparison would be to rotate after each bite or within a smaller time frame. Conditions can change to rapidly in longer time frames.
I like using a heavy cane-pole with 50lb test line, a split shot weight and a strong long shank j-hook. For bait I like to use relatively small pieces of shrimp and blue claw crab legs

I wish they would eat a worm or a piece of shrimp, It's funny how the same species have different feeding habits but that has a lot to do with different and available bait in our particular areas but that's what keeps us anglers on our toes....

I caught all of mine on barnacles which was a first for me and also landed my PB sheep at 22”. I’m ready for the trout to move back into the “so called surf” around here but I’m sure gonna miss the sheepshead.

You should try shorter time because like you said the wind and the current train so you should do like half hour or every 15 minutes, so keeping both kind of even.
To get a MUCH fairer comparison of baits…go every other cast or…3 casts with one bait and then 3 with the other. Of course any given day, the fish do prefer one over others…the next day it may change haha 🤷🏼♂️😂🎣🤙🏻🍻

Thanks man. I think maturity is knowing you don’t have to keep a limit just because you can. Now don’t get me wrong there are people out there that may only fish every once in a while and need to stock their freezer but for me I enjoy putting them back.
I tried night crawlers all day yesterday.My two other buddies on the boats went threw 100 crabs and caught sheepheads. I only cough 3 babey grouper, But what's weird is the sheephead will eat (Tube worms) Which look like night crawlers. Tube worms live under water in the sand. You dig them up on a really low tide.

I don’t think the worms get ate as fast as other baits but I do think that if that bait sits down there in front of a sheepshead he is going to eat it eventually. The worms are kind of a back up if you don’t have anything else or can’t afford anything else.

I used to lose alot of fish with circle hooks so I switched to J hooks. I don't lose as many.
I’ve experimented with a ton of hooks and these are the best I’ve found I think I just got bad hook sets
