Good to see a couple of fellow South East Asian Brothers chow down on Filipino food like it’s second instinct… Yeah spice is normally lacking in Filipino food (despite being the country to introduce chillis 🌶️ to the Asian continent) but a lot of fusion / modern chefs are beginning to introduce spice to their cooking.

My girlfriend is from southern Philippines, Mindanao. When they eat spicy foods it’s more of a dipping sauce. Sauce contains vinegar, soy sauce, diced onion, diced red chili, and calamansi. Everything you ate except the balut looked amazing. I’ve never tried it but I have tried dinuguan.

unfortunately much Filipino food does not contain a lot of spice, which is crazy cause all the neighboring countries have prominent spice in their cuisines. You may find "spicy" dishes outside of the island of Luzon, but never to the level of other Southeast Asian countries.
it's really a result of Spanish, American and Cantonese influences throughout the centuries.

Filipinos are big on balut. I've tried it, and it's not so bad. I've eaten a whole roasted chicken, and duck. Balut has the egg yolk, egg white and baby chicken. It's not that bad, most people are scared to eat it.

We have a unique love story, because we stumbled across one another 6 years ago on Facebook, and were not "Catfishing" each other. My first time ever visiting the East Coast was with my husband, when I went to meet his family. Likewise, I have shown him around California (on the West Coast). I notice you, don't make it to the "West Coast" often. However, if you're in the Los Angeles area, I would love to be your "tour guide" because as you know; you have to ask the natives where are the best eating spots!

from living in philippines for close a decade filipino food are more into fried, sweet, sour, bitter side.
they are not into spice compared to its asian neighbors, and strong influence from India and China.
however certain regions of the philippines does feature spicy food from what i remember three distinct spicy filipino food: dinogoanne, bicol express and laing are imho overlooked filipino food

You guys ever try ampalaya (bitter melon)? It's a signature flavor in this Filipino stew dish called pinakbet. It has a pretty well-rounded flavor/texture profile from bitterness to savoriness of the pork to sweetness of squash to squishiness of okra, etc. If you're looking to explore more Pinoy flavors, give that a try.
