Approximately in the middle of the board is a good place, but you might want to roll up your board and mark the best place considering the fold of your board - every brand is a little different.
(Back a little from the center is also ok)

What length of fin do you recommend using with this as a wing trainer?

at least 9 inch (23cm, shop.air7.net/ss-9hfsup-rev.html ), we have also tested with a 12" (30cm, shop.air7.net/sc-12hf-fg-us.html) windsurf fin this is even better
