Creamy Butternut Squash and Sage Risotto
recipe by shereen pavlides
serves: 4 - 5
*{Diamond Crystal kosher salt is used for all of my recipes. If using a different brand, please adjust measurements and season to taste}.
1 pound butternut squash - peeled, diced into small cubes (seeds &
strings gutted)
kosher salt / fresh finely ground black pepper
2 - 3 tablespoons canola oil
4 cups chicken stock or vegetable stock
3 tablespoons unsalted butter
2 large shallots - small dice (1/2 cup)
2 garlic cloves - minced
3 tablespoons fresh sage - thinly sliced
1 cup arborio or carnaroli rice
1/2 cup dry sherry
1/2 cup mascarpone cheese - room temperature
1/2 cup freshly grated & packed parmiggiano-reggiano cheese
fresh chives - snipped Хобби

You weren't kidding, that came out perfect and creamy like a good risotto should.
I was also pretty skeptical when it said you could eat the skin of that squash but it did seem just like a chip. Interesting. Did it taste good enough to warrant doing it instead of tossing it in the compost?

400 degrees F. Roast until caramelized, 30 - 40 minutes, tossing halfway through. I hope you enjoy the Milanese 💗

When roasting what degree should the oven be? You didn’t state that in the video.

Really lovely dish. Made a few times now.
The only thing is she doesn't say is timing on squash in the oven - I did mine for about 40-45mins to get the same beautiful caramel colour.
Genuinely restautant quality and it's a lot healthier!
What does butternut squash taste like? Like pumpkin? Zucchini? Never had it and afraid to try. I never had risotto either. Don’t care for foods that are liquids like this or grits or creamed corn. Looks like farina too which I don’t eat.
