      haha thank you! :) I have had a lot of practice of making them in London! I also use to make a very nice seafood risotto with smoked mussels and cockles! very popular!

    Risotto is one of my all time favorite fancy dishes...the flavors are always so good and the richness of the rice makes it. Perfect risotto James, love that you made it seem so simple. Have a wonderful day :)

      Thank you!! I try to make it simple to make, as it can be a bit complicated. funny thing I never order risotto when I eat out, or of any other thing that I make a lot of in the kitchen! haha

    This is one of the best Risotto recipes I've seen! Ironically the first time I ever tried to make Risotto it was a Pumpkin Risotto but it was not pureed. And also I can't believe this because a friend of mine has just given me a massive pumpkin from his garden...Looks like I better get cooking. The presentation at the end was glorious! Thank you for sharing this one Chef!

      Thank you very much Patrick! it means a lot to me!!! haha what a coincidence! it's nice having friends like this! my dad does the same thing back home, he grows all types of squash, tomatoes, beans, etc. my first risotto was with Jerusalem artichoke, not bad really! haha yes you should! Risotto, Soup, and Pumpkin pie! it's another tasty dish! :) again, thank you very much!!

    Apart from the Spanish food, I love the Italian food, so one of my favourite dishes is the Risotto, during this quarantine I had the occasion of doing it (vegan risotto) and know thanks to you James I know another manner to do it, thanks for the masterpiece and the italian presentation, chef

    Wow, almost at 400 subs, way to go Chef! Great method and recipe, as always. I am surprised you didn't toast the rice. No big deal of course. The creaminess and the way your risotto sits on the plate is a dead giveaway that its cooked perfectly. Lovely plating too. Cheers!

      Thank you very much Geoff! I did, just before I added the wine, but I don't like a lot of oil in the pan. haha I used to make about 20 to 30 of these a day at Berners Tavern. I got very tired of tasting!

    Love risotto and so the italian food! But not in all the restaurants do it correctly, I like it like this, creamy and smooth! That's a perfect risotto for me! Thank you for sharing, keep it up!!

    Okay, I'm finally doing it, I'm making risotto with a puree, as per this recipe. Little bit nervous, as my risottos in the past have turned out kinda like glue- but then again, my husband will eat anything- so he's the canary in the coal mine on this one!

    I love risotto and am always looking for new variants :D thank you. My partner wants me to ask what living in Spain is like ? My understanding of Spain is limited to chorizo, paella and the Napoleonic era.

      Thank you! No you have a lot here but it depends on where you live like everywhere. Some thing can be a bit hard to get but I do feel safer walking in Barcelona at night then I did when I used to work in Seattle.
