The expression is "couldn't care less" - if you say "could care less" then you imply that they actually care about it, you're saying the opposite of what you want to say. Also "careless" is an adjective, and it makes no grammatical sense in the situation you used it in, it's two words "care less" because you're saying she cares so little about it that she cannot possibly care any less than she does
