Fluffy Coffee Steamed cake Recipe (Whole Eggs Method) 咖啡蒸蛋糕

- No-bake, super soft and fluffy steamed coffee sponge cake recipe. Intensely aromatic of coffee flavour that you can't resist to try. No baking powder added, it is important to whisk whole eggs with sugar until smooth and fluffy, a beautiful ribbon stage, that's it!
Ingredients 材料: 6" round mould
4 eggs 鸡蛋 (60-62g, room tempreture 室温)
60 g (1/4 cup) caster sugar 细砂糖
80 g (1/2 cup) cake flour 低筋面粉
1 sachet (18 g) instant premix coffee 即溶咖啡粉
20 ml (4 tsp) hot water 热水
1 tbsp vegetable oil 菜油
Steam over medium heat for 25 minnutes

💗💗可以,一样蓬松。160°C ,上下火,30-35分钟。烤的不用盖锡箔纸,因为不会有水蒸气滴落。

150°C - 160°C, for 30-45 minutes.

It's importance to beat the eggs until smooth and fluffy and reach ribbon stage, then fold in flour gently in 3 batches.

Sorry. incomplete. I tried your recipe and it was very successful. I felt very happy becos this is my successful sponge cake after trying so many . It’s soft & fluffy. I wonder why the top has a lot of bubble holes and not smooth like yours. Pls explain. Thanks
1. Ensure fold in flour gently, do not over mix(refer to video 1:50 - 2:57).
2. Tap the pan to help get rid of big bubbles(refer to video 4:35)

嗨,想请教一下,因为视频里说要轻轻搅拌,不要过度搅拌,我也照着说的尽量不要过度搅拌,可是这照成了蛋糕里有干面粉,,可是如果搅拌多几次,就开始消泡,开始慢慢变水状,照成蛋糕好多大气泡😂😂
