The cameras are great on all of them. You can't go wrong with either one. For me, it all came down to the software. I returned the iPhone 12, which was the first iOS device I ever used, after only 2 weeks of usage because it was simply not for me. I got a Pixel 5 instead and my sanity slowly came back. And maybe I'm weird but I also found the iPhone 12 really uncomfortable to use.
I have the same feelings about my new iphone 12 pro max coming from a Samsung S20. I have to keep it (got on contract), let's see maybe I get used to it.

The Pixel is just so consistant... it easily makes every scenery look like how you see in person reality. It is just reality, even with the small HDR shortcomings from the older sensor. The Pixel 5 sticks more closely to the real colors, the iphone to the yellows and overlaps the colors, Samsung is a slight balance between the two, but the Pixel is still the best camera.
Without actually 'being there' and seeing/experiencing the actual conditions, colors, lighting, etc in person, it's literally impossible to determine which phone more closely captured each scene's true conditions.
You should definitely add a section to your camera comparison like fast moving objects, like kids and dogs. Most cameras struggle with it, for example the Note 20 Ultra is much worse than a cheaper iPhone 11...
Video wise, the iphones HDR is just too jumpy, even with slow walking the white balance of the sky especially jumps around so much. FE for example held it much more smoothly.

Google's Night Sight is not more "software" than the default mode. The default mode already combines ≈8 frames. Actually it's just physics. Night Sight uses a much longer exposure time per frame. On a Pixel 3a up to 1s per frame (or even 4s per frame if you hold the phone too steady) whereas the default mode chooses 1/17s per frame (if you hold the phone steady, then it also chooses 1/8s, but then it seems to combine less frames). So 17 times as much light per frame! This has nothing to do with software. And if the iPhone Mini takes a better low-light photo, then this should have nearly nothing to do with the hardware. "Old sensor" is also not really true. The first time the sensor of the Pixel 5 was used was in 2018. Sensors don't improve their low light noise performance significantly every year. Though the sensor of the Pixel 3/5 has a lot of dead pixels.
Thank you for the info. It still is an old sensor. Raw sensor data without night mode has a crap ton of noise. Combining frames or exposure still needs software optimization to reduce the noise and balance the overall image. This is why the processing constantly changes regardless of hardware. Pictures taken today aren’t the same as they were 3 months ago.
But the iPhone tends to find details in the sky that you cannot even see with eye so it's not very true to what you see in real life almost too much HDR going on sometimes with the iPhone. I bet the sun didn't look that tiny either in real life.
