It is such a treasure to see you happily making a new video for us in this crisis. I think the kind of noodle you made is similar to the way my granny makes a kind of southern comfort food called "chicken and dumplings." It's a chicken soup with lots of black pepper and thyme, but you add dough to the soup by tearing it or scooping it in small chunks. The soup naturally thickens into a gravy from the starch of the noodles. It's called "dumpling," but it's very different than East Asian dumplings!
They also look similar to a Japanese style noodle used in Dango-jiru, a fantastic soup, so I’m excited to try this, it looks delicious! My Japanese family will be thrilled.
I think the only difference is no eggs. I put slightly wet dough on a dinner plate, dip a butter knife in the hot water, or soup, and cut off a small pice of dough into the boiling liquid. It is a knack, and need to work fast so that the first aren't cooked before you get all the dough in the pot.

I use a small glass cutting board.. grandma taught me to dip the knife down into the boiling water, to make things more slippery and to go faster. I usually fish them out with a spider, and put them into hot butter or hot bacon grease. I guess they would be a kind of spaetzle

All the local chain groceries are out of potatoes, meat, TP, sanitizer, and wipes for the carts. But the H-MART (korean grocery store) had all those (except sanitizer) but were entirely out of Kimchi!

From an unverified source I found on the internet, the late actress Choi Jin-sil's (may she rest in piece) childhood nickname was Sujebi due to the same reason. There are conflicting reports regarding whether she loved it or hated this dish, but a 1991 documentary depicted her making it for her friends and eating it together. One of her fellow actresses even said she would miss Jin-sil's handmade sujebi the most 😭🙏

I started cooking Korean food because I missed my moms cooking. I made soondubu and bossam and sent her a picture. She was so impressed she asked where I learned how to make it. I told her “Maangchi!” I was surprised that my mom knew who you were! Turns out she occasionally gets recipes from you too! In a way I grew up eating Maangchis recipes and I didn’t even know it. Made this today for lunch (as I just made kimchi a few days ago) and it was a hit with everyone! I didn't have anchovies so I used wakame and nori plus an extra dash of fish sauce and it was perfect! Your noodles were so easy to make and were truly delicious! (Bonus, my husband says I should challenge myself to cook through all your recipes ala Julie and Julia and I just might, though I am less ambitious)

Thanks Maangchi! I remember my mom making this from way, way back. She made this and kulgookshoo (knife-cut noodles) on weekends when she was home from work. It wasn't the fanciest dish but like most traditional Korean food -- it was made of simple ingredients and really satisfying.
