You may have already thought of this but you could create a master class type of series with the basics of baking, etc. Your method of explanation and demonstration is simply the best. You are a wonderful teacher and have all the qualities of instruction that make the subject enjoyable - experience, creativity, humor, humility and kindness. The way you explain everything really helps the viewer understand. I just love your videos. 😊💜
As a 9 year old in 4-H and then again in middle school home-ec this is something that was engrained in my head! Thanks for passing it along to new bakers.
Best practice, always sift first! Then again, I cannot even imagine a world without my kitchen scales! Yup, I'm the proud owner of several ones, including one that measures by % for when I'm baking with bread formulas :)

This is so interesting! Sometimes it's the simplest things that make all the difference! I usually use a scale, but over Christmas the battery died & my cakes were disasters (I couldn't work out where I had gone wrong!)- I was guilty of dipping in the bag! Thanks John! 👍
Your tip on measuring by volume after fluffing the flour is an EXCELLENT tip! I have a culinary degree and in the Pastry class I took we were taught to measure EVERYTHING by weight. Because if you don’t your final product could be terrible. Whereas in culinary adjustments can be made. Most recipes written in the USA use the volume method of measuring dry ingredients, you can try looking for foreign/international recipes or recipes written by a chef, I have more confidence using either one. I started to vacuum seal most of my dry ingredients in which it preserves and prevents those little pesky moths, but it compacts the flour to a brick making it difficult to work with. And before either weight or volume measurements are taking it has to be sifted. In which it throws the volume measurements WAY off. I wish I could figure out a way to mimic your volume measurement method…
I wish all American recipes were in grams. Such fantastic stuff coming from the USA but I nearly always opt for UK recipes for the weight measurements as they are more accurate 😃 Love your channel 💕
Yes you are right Samantha. It drives me nuts when they only give you cup measurements and not in grams. I can't be bothered with the conversion table, so like you i go for UK recipe. I really don't get cup measurements.
Try living in Canada! Recipes are in cups, speed signs are in kilometers, we weigh ourselves in pounds, but meat is sold in kilograms. Oven temp is in Fahrenheit, but weather is reported in Celcius. Length measurements - inches vs centimeters - depend on what age you are (we converted to metric in the late 70s)! 😂

I told him that to be successful in baking, remember it's just some techniques, and that it all boils down to basic chemistry [most importantly--measure]. Now, I will add in "weigh". Thanks, John. So many recipes are in cups. I need to make an equivalent chart to hang on the fridge. Since learning the proper way to measure, my cakes are well received. I noticed that "Joy of Baking" gives the cup measures and then also gives just about all of the ingredients in grams, even the spoon measurements. I love that.
I always use kitchen scales. BUT recently I went and bought cup measures because of a chocolate chip cookie recipe that uses 2 different types of flour. When I used the gram conversions, the cookie turned out too oily and flat. So glad for this tip on how to use the cup measures. never had to use them before. I ended up using more flour for the recipe now, not a lot more, but the cookies turned out better :)
I find sifting my flour baking soda and even my different sugars also and even cocoa powder and baking powder helps it makes the recipes come out so much better . I did that with a sugar cookie recipe and the dough came out perfect I have never had my dough come out so easy to roll out and not stick to everything hardly had to use flour to roll out dough amazing

Now I’ve stopped using cups because I have realised that it’s much easier to measure using scales than using cups but when I used to measure in cups Ifollowed the exact same procedure, I fluffed up the flour and then levelled it properly and my baked goods always came out perfect, so it’s not that cups don’t offer accuracy but scales do make it easier to measure..
My problem with cups/teaspoons is that when measuring honey or sticky or oily substances you create another dirty tool to be washed. With a scale you end up with less dishes to wash along with higher accuracy. Did I miss something?

I found a sifter/scale attachment today at williams sonoma that weighs,sifts and shoots ingredients into my stand mixer. Excited to use it. No more cleaning measuring cups and getting flour everywhere.

She used to bake and decorate cakes and sell them out of our house for extra money when I was growing up. But, YOU are awesome either way you cook/bake!
She more than likely fluffed her flour first always. I've been baking for 40 years and I never had a scale until the last 10 and everything turned out prior to that but I always knew since I was 9 years old to fluff my flower and not pack anything so then it made it way more accurate like he showed us.

I have tried so many of your recipes & they work great. I did get a scale. BUT so many charts are different in there conversions. Please help & tell me a good chart to have, wish you would make one!!!!!
I just started watching your videos and love them. I prefer weighing ingredients too but didn’t realize they could be off that much if you dipped the cup into the bag. I did learn from Martha Stewart to use the spoon method. Anyway, I I just found a conversion chart on King Arthur Flour’s website that has a big list of ingredients that converts cup measurements into grams or ounces.

Every time I mention weighing people have a fit about it. This is so true. This is what I do for everything I make myself. I also do the same way every time.
CAN YOU PLEASE MAKE A VIDEO OF YOUR CONVERSION UNITS FROM CUPS TO GRAMS FOR YOUR RECIPES??? I realized that recipes with weights of ingredients always tasted better for me instead of those using cups as measuring tool. And I just knew that using cups is just inaccurate way to do things. So...I've always adjusted my recipes from cups to grams myself. I just want to know what's your conversion units? Thanks!
Maybe it's just me but I used to measure using cups since high school and I always aerated the flower with the measuring cup first before I scooped the cup full. I do it when measuring all dry ingredients. I also never used a utensil to level it. I always slightly shook the measuring cup to level it. Never had any issues with having too much flour. In recent years I did switch to using a scale simply because 1 cup doesn't equal the same around the world, e.g. a US cup is less (240ml) than a UK cup (250ml), the latter being what I grew up using.
I never knew about this. I’m guilty of patting the flour in my measuring cup and wondered why my cakes never came out right. Now I know. I paused ur video and went on Amazon to order my scale. Now im going to try to make my own strips and see what happens. I love ur videos! You make it look so easy. Thank you and keep those videos coming.
I am SO GLAD you did this video. People get it wrong all the time. I read the Cake Bible, and it's where I learned the proper measurement (which is a lot less flour than most people realize). She recommends 116 grams, but I also use 120 as it's easier to do the math for all the measurements.
At last! As a Brit I gave up on US baking recipes (which was a shame) as measuring in cups made no sense -they can be wildly inaccurate. I was SOOOO plsd when u started using scales!! My scales were so cheap, have never let me down, and they measure in ounces or grammes, so I can use them for my really old recipes before the metric system 😄😄😄
I like using scale too. When i found some recipe that use Measuring cups it was hard to follow and i never did it right. Kitchen is not expensive. I got the cheapest one on ebay about $5 and it works fine.

Ever since joyofbaking told me to use a scale I use it! No more measuring cups. Although I will be honest I still get confused when a recipe calls for sifted flour. Do you sift it as you go until you get the right amount of flour ? Or you sift after you weigh in grams ? TIA
If the recipe calls for say, 120 grams of sifted flour, then you sift first and then weigh out the 120 grams, if it calls for 120 grams of flour sifted, then you weigh out the 120 grams and then sift it into your bowl for use. Hope this helps.

My mother and BOTH my grandmothers told me to NEVER just pull a cup of flour out of the bag--even if it's called "pre-sifted". They taught me to sift some flour into a bowl and then dip the measuring cup in and level off the measuring cup with a metal spatula. Today, I DO use a digital scale to ensure the correct amount, but, in their day (between 1897 and 1997) digital scales were far into the future. The only scale in our home was the baby scale, a large cast iron and steel contraption that was a cross between a cradle and a hopper on which each infant was placed weekly to check appropriate weight gain.
Want about using a sifter to fluff up the flour if you don't have a scale? After using the sifter, I measure the flour carefully without packing the flour into the measuring cup or I sifter right into measuring cup while it sits in a large bowl to catch what doesn't go into the measuring cup. Using the sifter my cookies are so much better. I never used a scale in baking. I love your recipes and all your video. Your channel is awesome. You explain how easy it is to use a scale in baking. You also always give the conversion of cups to grams. I now want to buy a scale. Can you recommend one?

This is why I measure my dry ingredients on a scale. More accurate and better results. The fluffing is a great tip for new bakers . 🙂

I have tried so many of your recipes & they work great. I did get a scale. BUT so many charts are different in there conversions. Please help & tell me a good chart to have, wish you would make one!!!!!

I just started watching your videos and love them. I prefer weighing ingredients too but didn’t realize they could be off that much if you dipped the cup into the bag. I did learn from Martha Stewart to use the spoon method. Anyway, I I just found a conversion chart on King Arthur Flour’s website that has a big list of ingredients that converts cup measurements into grams or ounces.

I realized that recipes with weights of ingredients always tasted better for me instead of those using cups as measuring tool. And I just knew that using cups is just inaccurate way to do things. So...I've always adjusted my recipes from cups to grams myself. I just want to know what's your conversion units? Thanks!

Maybe it's just me but I used to measure using cups since high school and I always aerated the flower with the measuring cup first before I scooped the cup full. I do it when measuring all dry ingredients. I also never used a utensil to level it. I always slightly shook the measuring cup to level it. Never had any issues with having too much flour. In recent years I did switch to using a scale simply because 1 cup doesn't equal the same around the world, e.g. a US cup is less (240ml) than a UK cup (250ml), the latter being what I grew up using.
I never knew about this. I’m guilty of patting the flour in my measuring cup and wondered why my cakes never came out right. Now I know. I paused ur video and went on Amazon to order my scale. Now im going to try to make my own strips and see what happens. I love ur videos! You make it look so easy. Thank you and keep those videos coming.

I am SO GLAD you did this video. People get it wrong all the time. I read the Cake Bible, and it's where I learned the proper measurement (which is a lot less flour than most people realize). She recommends 116 grams, but I also use 120 as it's easier to do the math for all the measurements.

The scale would’ve been set to 0 with cup on its own
If it was including the cup it would’ve weighed wayyyyyy more than what the weight was. I think the guy clearly knows how to use a scale lol
Right the cup has to be sitting on the scale to put it at zero so he didn’t minus the weight of the cup!

At last! As a Brit I gave up on US baking recipes (which was a shame) as measuring in cups made no sense -they can be wildly inaccurate. I was SOOOO plsd when u started using scales!! My scales were so cheap, have never let me down, and they measure in ounces or grammes, so I can use them for my really old recipes before the metric system 😄😄😄
I've been doing it all wrong, packing my flour but thanks to this video, my future bakes will be better ^^ that and I just got a kitchen scale too 😊
I like using scale too. When i found some recipe that use Measuring cups it was hard to follow and i never did it right. Kitchen is not expensive. I got the cheapest one on ebay about $5 and it works fine.

Ever since joyofbaking told me to use a scale I use it! No more measuring cups. Although I will be honest I still get confused when a recipe calls for sifted flour. Do you sift it as you go until you get the right amount of flour ? Or you sift after you weigh in grams ? TIA
I follow her too! You can sift as you go but I sift then weigh
If the recipe calls for say, 120 grams of sifted flour, then you sift first and then weigh out the 120 grams, if it calls for 120 grams of flour sifted, then you weigh out the 120 grams and then sift it into your bowl for use. Hope this helps.

A scale is a must!
My mother and BOTH my grandmothers told me to NEVER just pull a cup of flour out of the bag--even if it's called "pre-sifted". They taught me to sift some flour into a bowl and then dip the measuring cup in and level off the measuring cup with a metal spatula. Today, I DO use a digital scale to ensure the correct amount, but, in their day (between 1897 and 1997) digital scales were far into the future. The only scale in our home was the baby scale, a large cast iron and steel contraption that was a cross between a cradle and a hopper on which each infant was placed weekly to check appropriate weight gain.
Want about using a sifter to fluff up the flour if you don't have a scale? After using the sifter, I measure the flour carefully without packing the flour into the measuring cup or I sifter right into measuring cup while it sits in a large bowl to catch what doesn't go into the measuring cup. Using the sifter my cookies are so much better. I never used a scale in baking. I love your recipes and all your video. Your channel is awesome. You explain how easy it is to use a scale in baking. You also always give the conversion of cups to grams. I now want to buy a scale. Can you recommend one?
