I love Natasha and her recipes. I would however like to add something from my own research. I now only use a scale and weigh ALL of my ingredients, especially flour. It is always accurate, and if using a scale with a “tare” feature, faster! And less dishes as well. I experimented with even the spoon and level and that can be off too. But for many Americans who insist on using cup measurements, the method that Natasha is recommending is by far the most accurate. And for some of Natasha’s recipes, I use her method of measuring so as to replicate her results.
Once I started using a scale, my baked goods were from that point on, always consistent.
A gram is always a gram and an ounce is always an ounce, which is why the pros use weights.
This was a very interesting video and as always, Natasha is absolutely charming. And her daughter is as well!
I want to say how amazing your work is. I have many of your recipes saved. I like to study your videos and make my own notes. Everything I make from your recipe is great! Your videos sparked my passion for cooking. Your videos are dynamic, fast, energetic, happy but not chaotic and everything is explained so even silly person like me can understand it.

Now I know why my dough would always be dry and needing to add more liquid.

When I measure dry ingredients or butter, I always add in a bit more because sometimes it gets stuck to the sides so I lose some

when you measure powdered sugar, can you just dip the measuring cup into the powdered sugar or do you need to spoon the powdered sugar?

I have brought some stone mesuring cups. As we use tea spoons ect. I felt getting proper mesuring cups would help me save ingrediants.

Natasha, are all measuring spoons created equal? We started comparing our 3 types of measuring spoons and found a huge difference in the amount that the teaspoon measured. One set measured a teaspoon of granulated sugar at 4 grams and another set measured 7 grams. That is a huge difference. Can you do a video on calibrating your measuring spoons and cups? No wonder I’m a bad cook.

So nice to see proper use of wet and dry measuring cups, spooning and leveling. When these supposedly great cooks dip into the flour bin with the measuring cup and then "level" with their finger, I cringe. You always get way too much flour, totally messes up your recipe and day. LOL

I read and am learning that cooking, is like chemistry. You need to be careful about how you make your equation/formula, otherwise, you'll end up with an explosion!! ( ok, exaggerating a bit, but you know what I mean ) lmao.

When measuring thick ingredients like peanutbutter, sour cream, mayonnaise and butter. Pack them into the measuring cup with the back of your spoon before leveling off. These type of ingredients do develop air pockets.

I have found it SO much easier to measure flour and sugar by grams rather than in dry measuring cups. Why scoop and scoop and level, etc., for each cup when you can simply dump the right amount into the mixing bowl and stop when you get to, say, 240 g for two cups of flour? SO much easier. (That's according to the chart you shared; what I found was 125 g per cup of white flour.)
Hi Sandi! This is a universal way of measuring for those who don't have a food scale. If you click on "metric" in the recipe card of my recipes, there is a gram conversion so you measure in grams if you prefer.

I'm surprised you didn't include a demonstration about how to measure butter using water displacement. I learned this in high school cooking class in the 1950s and have been using that method every since.

I use the scale and measuring cup as a back up way. 1 cup of flour is 120 grams. You cannot go wrong

Shortening should be measured by the water displacement method. If you need 1/2 cup fill a liquid measuring cup with water to 1 cup then add shortening until the water level reaches 1 1/2 cup. You can adjust the water to any measurement then add the shortening. Same as when you get in a tub of water and the level goes up.
Hi Natasha, This really helps. You asked for suggestions on how to do stuff, and I have one. Can you show or do a demo on how to fill a pastry bag. I have yet to do so without a mess and then applying the contents always eventually gets everywhere. Help! lol thanks!
I just watched your video on measuring wet and dry ingredients for baking. A lot of useful information that I never heard before. You mentioned a link for the measuring spoons that are magnetic, but don't know where to look for the link. I have a plastic set with a small magnet, but they don't stay together as well as the metal measuring spoons you showed.

Seriously, though, that's way too many measuring systems. I just stick to weighing and there's no worry about specific sized cups and spoons. Rations and scales are my best friends.

I don't know if this has been previously addressed in the comments, but my understanding is the double-sided measuring spoons are double-sided because they are used independently depending on liquid or dry measuring, (the round end is for liquids and the narrow end for dry). I have the same magnetic spoons as you and I can't remember if it came in the literature with them or if I just heard it somewhere, but I just double-checked on google and it seems to be the case. Anyone else heard this before?

What’s the difference between the liquid and dry measuring cups? Always wondered. Great video!
Hi Erin, the dry ingredient cups are the ones that you can level off the top, while liquid ones are usually glass and have a pouring lip (see links above for the ones we use and love)
Natashas Kitchen should have been more specific sorry, I mean like what would happen if you measured milk in a dry measure cup? Is it the same amount?
