A fellow car enthusiast in a cold climate here. Spray foam is your friend. Find any gap or crack and fill it. Caulk the exterior once it is warmer out. Every little bit matters. BTW the shelves in back are not structural. Get rid of them if you don't want them, and lay out storage for your needs. Add some 2x4's to the ceiling and put up a vapour barrier as a bare minimum. Use your leftover pegboard ON TOP of the ceiling 2x4's and use it to support fibreglass insulation. More is better for winter. You don't need 15 inch centres to lay insulation in your attic. Good luck!
Appreciate all the advice!! Maybe I’ll tackle the ceiling insulation down the road. Gonna add a couple electrical elements in the meantime. Cheers
