So you don't have the cheese become all elastic, finely grate the cheese and mix it into the melted butter in a bowl. Temper it by adding a little of the pasta water to the bowl. Add the pasta to the pan and then pour in the butter and cheese mix whilst the pasta is off the heat. You could add a little more pasta water and sprinkling of cheese to make it more creamy.

I made the zucchini alfredo from your video and I panicked and I think I dumped in too much cheese to fast because it all clumped up and separated… it never became a sauce. I just mixed it as best I could and ate it anyway and it was delicious but the texture was horrible… slimy cheese and greasy butter… but the taste was awesome. I’m going to try again soon, I have more fresh garlic and zucchini and cheese and I really want to make it work… any advice would be incredible!!!

I never panic while cooking, but I definitely lost my cool with that sauce… lol I have everything I need to try again, so probably tonight I’m going to go for it. Lower temp, add in the cheese slowly in smaller batches.. Hopefully it works this time, because the flavor was delicious but the texture was almost inedible.
