I typically always use unsalted butter. I add the salt as needed.

Unfortunately, it now costs more to buy the separate ingredients at the grocery store than it does to buy pre-made Alfredo sauce. It’s like we are being forced, over time, to buy portioned ready made food products they can charge you more for based upon quantity instead of what used to be the cheaper way which was preparing and making it yourself.
I know, things are crazy expensive these days 👎😦
There are some things that you cook which are worth paying more for the ingredients. Remember that manufactured sauces may have chemicals in them ,to extend shelf life , that you don’t want to ingest
@@sharondoan1447My exact thoughts. My grocery shopping list per month went from $200 before the price hike to $380 per month. I had to find a way to make it work. Now I'm able to buy and cook awesome homemade meals.
I personally don't mind if I spend a couple bucks more by making homemade Alfredo sauce or whatever. At least I can control what goes in it. My health was awful 5 years ago before I changed what I ate. I stopped buying processed foods, nothing premade with preservatives and other easy time saving stuff.
Speaking of TIME...
That's another thing I had to change, like prepping a day or two before for the meals that take a lot of work.
I don't always have the time to make homemade pasta though.
But when I do I have zero regrets. It tastes better, and I feel better. I DIGEST homemade foods BETTER as well. Especially pastas and breads etc
I stock up on the basic non-perishable stuff: different beans, rice, flour etc monthly.
Weekly: I buy whatever vegetables I will need for the week so I don't waste anything, every dollar counts and I can't afford to toss out items that have gone bad, money down the drain. I make my own tomato sauce, yogurt etc etc now and freeze it.
It was frustrating in the beginning.
I don't find it much more expensive though. I guess it depends on what state, city and stores I guess.
I personally find myself saving money not spending more.
In my small town watching my grandmother make it work with basic stuff helped me a lot.
Six kids later, working and living in the city was when I started purchasing already made items to make it easier on me with the little time I had.
Every chance I get (when I have time, every other month) I spend $70 on food items and sell what I make (most times tamales, donuts etc) that helps me with my next grocery bill, or something else I need. Gotta do what I gotta do.
I am poor folk.... Poor folks will get by somehow or another 🤎
You can replace store brand dry parmigian/Romano in the plastic container & Whole milk to make it cheaper. Still way better than pre-made.

Don't use white pepper, it's spicy.
Use Cracked Pepper.
Don't salt, there is tons in the pasta water and cheese.
Mince the garlic extremely fine so it melts in the butter.
and add mushrooms Yummm 😋
I either have to eat non dairy or low or non fat dairy. Because of my LDL chorlesterol is too high.

To be on the safe side I would use 1.5 times the recipe quantities for 5 people. There may be a little left over but better to have more than less.

Hey there! Gave you a "thumbs up" for the technique, but I've never had an Alfredo sauce in any of the better Italian places I've ever eaten at that had garlic in it. I don't use it in mine. Fantastic method though! Nothing wrong with garlic, mind you. Love garlic. Keep cookin' Brother!!!

Yes, for those that don't like garlic, or want to keep the sauce simple ,it can be left out. It all depends on taste. In the end it all tastes fantastic. I'm going to use this recipe for dipping broccoli as a way to get my grandson to eat his veggies. I love gravies and sauces and of course, cheese makes everything taste yummy.

A good way to prepare broccoli is to roast it. My son never cared for it, even with cheese, until I started roasting it. Best part is you can use fresh or even frozen. I mostly use frozen and all I do is put out my desired amount in a colander, let it thaw some, shake off excess water, place it on a lined cookie sheet, bake at 425° for 10 minutes, remove, place broccoli into a bowl pour on a little oil, salt and pepper mix to cover and put it back on the same cookie sheet and roast about 15-20 minutes depending on how much you want it cooked. I like to get a little char on mine. I was really amazed at the difference in flavor between steamed and roasted broccoli. I will never cook it any other way. My son now loves broccoli 😂😂👍
You can also add other spices to it before the second oven trip, garlic & onion powders, pepper flakes, the sky is the limit.

This is definately American Italian as I'm sure you know, as a trained chef, that Italian Alfredo sauce doesn't contain cream. If you are American and are used to the Alfredo you get in American restaurants this is a winning recipe.

You're confusing Alfredo and Carbanara. You are no chef.
But there's no cream or milk in true Alfredo. There's no onions or garlic in true Alfredo. It's butter, cheese, and salty pasta water. One of the hallmark's of some of the great Itlaian pastas, like aglio e olio, carbonara, cacio e pepe, etc., is the use of few ingredients -- but of excellent quality, carefully chosen, and well prepared.
